Granola is my all-time love 🤤😏 if you followed me for longer 🙃 I just cannot go a day without 🤷🏻♀️ (I'm trying 🤪) granolaaaaa 🤤🤤🤤. This granola is one of my new favourites: TROPICAL FLORAL FIG CINNAMON CRUNCH GRANOLA WITH DATES. As the name already suggests, this granola is supperrr crunchy and tastes a bit like the cinnamon toast crunch cereal from the States? Instead of using lotsss of syrups or sugars, I used my beloved dates to sweeten this granola! Really, go give this one a go!
What makes this granola so special? The fact that I used pea protein crispies from @koro_nl to make this granola super high in protein! Pea protein is one of the best plant based sources of protein and therefore, this granola is not only SUPER DELICIOUS & addictive, it's super healthy & nutritious as well! My favourite combination!
Furthermore, I used some freeze-dried figs in here! You might think what? Freeze-dried figs? Yes! Due to the fact that we freeze dry the fruit, all the nutrients in there are preserved so I definitely love this! Here are some health benefits of (freeze-dried) figs! So definitely give them a try!
But Jen, can I use some substitutions?
Often I get some requests for substitution ideas, so here are some of them!
Medjool dates: if you don't like dates or simply don't have them at home, just use regular maple/agave/honey or any liquid sweetener of choice!
Pea protein crispies: for crunch and protein content, I used my beloved pea protein crispies, but any other crispy would work! Sunflower protein crispies, soy crispies, but if you don't have that. Then I suggest using quinoa puffs, puffed rice/spelt/millet or maybe buckwheat groats?
Cacao nibs: don't like cacao nibs? Well then use more nuts of choice! Or add some dark chocolate pieces at the end!
Freeze-dried figs: if you don't have freeze dried figs at home, any other freeze dried fruit would work! Mango, apple, papaya, raspberries, strawberries... Endless options! Or just simply leave them out!
TROPICAL FLORAL FIG NUTFREE CINNAMON CRUNCH GRANOLA WITH DATES
INGREDIENTS:
(vegan & gluten-free & refined sugar free & high protein)
⏰15 min
▪️150g of gluten-free oats
▪️70-100g of medjool dates @koro_nl
▪️100g of pea protein crispies* @koro_nl
▪️2 tbsp cinnamon @koro_nl
▪️40g of coconut flakes @Koro_nl
▪️30g of coconut oil
▪️30g of cacao nibs @koro_nl
▪️freeze dried figs @koro_nl
Method:
1️⃣Mash the dates into a puree, or if you have soft dates, you can kneed them into the rest later 😏. Then add all the ingredients except for the freeze dried figs in a bowl and use your hands till everything is incorporated together. Optional to add some nuts if you like that 💃🏻.
2️⃣Let this bake in the oven for 10 min until golden on 180C. Let it cool and then add in the freeze dried figs!
*no protein crispies? Then either use 100g of oats of 100g of puffed rice/quinoa/spelt of choice!
