CRUNCHY LIGHT PROTEIN CHOCOLATE GRANOLA



GIIIRRRLL, I am not joking if I say I have been making this granola over and over the past 3 weeks 🤣. It's gone within a couple of days lol. There is a reason people call me granola queen 👑. Anyways, this is a CRUNCHY LIGHT PROTEIN CHOCOLATE GRANOLA 🤤 that if you try this, you NEVER WANT any store-bought stuff anymore🙋🏻‍♀️. I added rice cakes to make the granola more 'light' compared to if you would make it with oats. Also instead of oats, I used puffed protein crispies (pea and soy) to make sure the protein content is super high! I also loveeee it with my beloved oatmeal of course! So if you do not have any puffed grains or crispies lying around, feel free to see 👇🏻 below for some good substitutes!


This Crunchy Light Protein Chocolate Granola just hit alllll the spots! For my chocolate-lovers, I used the healthy version of chocolate: cacao nibs & cacao powder instead of the regular sugary chocolate, buuuttt since we add maple syrup, this granola will not taste like crap 🙃 but rather be naturally sweetened!! The chocolate flavour is just absolutely incredible in combination with the crunchy protein crispies, rice cakes, the tropical coconut flakes, hearty nuts and the chia seeds just add some more healthy fats! I loveee this as a healthy dessert at night or for breakfast in combination with some yoghurt or milk! 🌱 What is your favourite way to eat granola?


Crunchy & Light

As I already said, this granola is light due to the fact that we use rice cakes! I know I know, weird right? Ever made granola with rice cakes? I think not 🤣, but trust me it's amazing! Also I used the pea and soy-crispier from @koro_nl which you can order with (JENNY5) for discount! They are basically just crunchy pieces of protein 🤤🤣 so perfect for that post-workout kick! Also they add more crunch as well!


Jen, what if I don't have something at home?

Of course, my friend, I have some ideas you can substitute it for!

  • Rice cakes: not a fan of rice cakes? Substitute with any other puffed grain! Spelt cakes would work, corn cakes, but also some puffed quinoa? Or puffed amaranth?

  • Puffed grains: I used soy and pea crispies, but feel free to use puffed quinoa or just regular oat flakes!

  • Mixed nuts: I used a mix of pecans, walnuts & macadamia. These are pretty high in fats, so keep you satisfied! But feel free to use any nuts of choice! Almonds, cashews would work amazing too!

  • Maple syrup: basically any syrup can be used: agave/honey/brown rice/date syrup... endless choices ;)

CRUNCHY LIGHT PROTEIN CHOCOLATE GRANOLA

INGREDIENTS:

(vegan & glutenfree)

⏰15 min

▪️7 rice cakes

▪️150g of any puffed grain or soy crispy of choice* (I used a mix of pea and soy crispies), but feel free to use puffed quinoa/buckwheat/rice or use OATS!

▪️2 tbsp of cacao powder

▪️70g of chopped mixed nuts of choice**

▪️60ml of maple syrup (add more for more sweetness)

▪️40g of coconut flakes

▪️1 pinch of salt

▪️20g of chiaseeds

▪️30g of cacao nibs

optional: add freeze-dried raspberries later


Method:

1️⃣Break up the rice cakes into smaller pieces with your hands. Then add in all the other ingredients! Feel free to switch adjust to your own liking!

2️⃣Bake on 170C for about 10 min. Let it cool down. Optional to add some freeze-dried raspberries now! ENJOY! (I loveee it with some coconut or oat milk!🌱) 🤤
