Overnight oats, we all love it right? But what if I say that this overnight porridge is not made with oats, but with something else? Well, have you ever heard of teff? It's one of the ancient grains that is sooo overlooked! I absolutely love the creamy taste that it gives to our porridges! Sooo to let this grain become a bit more popular, I made a delicious
COOKIES & CREAM LEMON CHEESECAKE OVERNIGHT TEFF PORRIDGE, but of course you can always make it with oatmeal as well!
Let me tell you a bit more about this combination. The fresh flavour of the lemon in combination with the sweet cookie dough cream, the fresh coconut yoghurt & sweet crunchy Oreo cookies is just a match made in heaven! I mean, who doesn't want a dessert for breakfast? I definitely do! So that's why this one combines one of my favourite things together: a creamy fresh cheesecake with my all-time favourite cookie: OREOS 🤤❤️. Unfortunately @oreo hasn't launched a gluten-free version in The Netherlands yet 🥲 (unless I missed that), but I found some good gluten-free & vegan copycats! But if you can eat the normal Oreo's I definitely recommend you using them!
What's the deal with teff?
Teff is used in the Eastern Africa cuisine for a looonggg time! It is similar as millet or quinoa but the grain is a lot smaller! It's protein packed, full of minerals, vitamin, fiber and lots more important nutrients!
Here are some of the health benefits:
Promotes growth as it has 8 different amino acids (building blocks of proteins)
May provide celiac support (as it's gluten-free)
Keeps your bones healthy (contains a lot of calcium!)
Strengthens immune system (contains lots of vit C)
Helps to increase circulation (the highest content of iron in this grain!)
Helps menstrual problem (anti-inflammatory)
Boost digestive health

COOKIES & CREAM LEMON CHEESECAKE OVERNIGHT TEFF PORRIDGE
INGREDIENTS:
(vegan & gluten-free & high protein)
⏰5 min
▪️50g of teff flakes / oatmeal
▪️1 scoop of vanilla or cookie dough protein powder*
▪️200ml of coconut milk
▪️1 tsp of lemon zest
▪️1 tsp of poppy seeds
▪️1 large squeeze of fresh lemon juice
topping:
▪️150ml of thick coconut yoghurt
▪️1 tsp of lemon zest
▪️1 or 2 crumbled oreo cookies
*sub for 1 tbsp of maple syrup + 20g of almond flour / oat flour
Method:
1️⃣Mix all the ingredients together in a jar and let it sit for at least 2 minutes.
2️⃣Top with yoghurt, lemon zest & crumble the cookies on top!
