GRANOLAAAA!! Honestly, one of the things I can just eat all day everyday ;). This healthy crunchy chocolate granola is SO EASY to make and at the same time JUST SO ADDICTING AND DELICIOUS! Perfect for any time really, breakfast, lunch, snack, dinner, dessert.... Granola is always a good idea! (definitely during stressful times like studying etc XD).
I used rice cakes for extra crunch, but feel free to sub for puffed grains or sub for oats or buckwheat instead!
Ingredients:
150g rolled oats
100g almonds
100g pecans
50g coconut flakes
30g chiaseeds
30g flaxseeds
40g sunflowerseeds
2 tbsp cacao powder
cinnamon
1 pinch of salt
6 ricecakes crumbled
maple syrup (use however you want depending on sweetness)
4 tbsp coconut oil (for crunch!)
1 big ripe banana mashed
chocolate chips
goji berries
raisins
Method:
Add all the ingredients except the banana, maple, coconut oil, chocolate chips and goji berries together in a bowl and mix until everything is mixed.
Mash the banana in a bowl, add maple syrup, coconut oil and stir until you have a sweet mixture.
Add this to the oat-nut concoction and mix everything together.
Let it bake in a preheated oven for 15 minutes and then flip around and let it bake for another 10 minutes on 180 degrees C.
Let it cool down and add chocolate chips, raisins & goji berries! Enjoy!
