OMG OMG OMG!! I have tried many many many banana oatmeal cookies in my life (trust me), but they were either too chewy, too soft, too dense, too not sweet, too not chocolatey, too not... just not great. BUT AFTER EXPERIMENTING 2347234239423 years, Jen has finally discovered the most delicious VEGAN BANANA OAT CHOCOLATE CHIP COOKIES!🍪🍌🍪🍫
They are SO CRUNCHY! And healthy and you can add optional maple syrup for extra sweetness, but it's not necessary! 🙆🏻♀️

These are the ingredients (super clean super easy):
* 2 big ripe bananas (approx 160g)
* 20g coconut oil (melted)
* 100g rolled oats
* 30g grated coconut
* 1 tsp cinnamon
* 1/2 tsp salt
* 20g date syrup (optional)
* 30g cacao nibs or chocolate chips
* optional: ground nuts or coconut chips!
Method:
1. Puree your ripe spotty brown bastards with a fork.
2. Toast the listed ingredients together in a pan on medium to high heat. Keep stirring, don't let our oats burrn...
3. Preheat the oven to 160 degrees.
4. Combine the banana puree with the rest of the ingredients and make cookies out of them.
5. Top with more chocolate chips ;)
6. Bake in the oven for 25 minutes
7. Try not to eat the whole batch in one go XD if so, thats fine ;)

You can of course create MANY VARIATIONS with them, but this is just a base recipe!
