TUNA PESTO SALAD WITH ROASTED VEGGIES | VEGAN & GLUTENFREE





The weather is hotter and cold salads are everything you want right? This tuna salad is vegan as I used vegan tuna, but feel free to use regular tuna instead if you prefer that ;). I always loveeed pasta salads (still do), but for a switch up I decided to make a `tuna pesto' in the middle and serve it alongside a whole bunch of roasted veggies ;) I promise, this one is SO DELICIOUS, and you get to eat the entire mountain ;)


Ingredients tuna pesto:

  • 1 can (vegan) tuna

  • 1 tsp lemon juice

  • 2 tbsp vegan green pesto (I used avocado pesto from my e-book)

  • 1 tsp mustard (leave out if you don't like it)

  • 1 tbsp tomato paste

  • black pepper

Ingredients roasted veggies:

  • sweet potatoe

  • parsnip

  • carrot

  • pumpkin

  • zucchini

  • carrot

  • radish

  • bell pepper

  • 2 tbsp garlic olive oil

  • salt & black pepper

  • dried herbs (I used rosemary and thyme)

Ingredients salad:

  • baby spinach

  • cucumber

  • olives

  • corn

  • roasted pumpkinseeds

  • apple

  • raisins

Ingredients dressing:

  • 2 tbsp garlic olive oil

  • 1 tbsp balsamic vinegar

  • salt & black pepper

Method:

  1. Preheat the oven to 180 degrees C and cut the veggies into smaller pieces. Add the olive oil, salt, black pepper and herbs and let them roast in the oven on 180 degrees for 30 minutes. Decide for yourself what veggies you want to use and how much ;)

  2. Make the tuna pesto by mixing all the ingredients together.

  3. Make the dressing by mixing all the ingredients together.

  4. For the salad, wash the veggies and add them to a bowl, add the dressing and massage it in the veggies, this helps to break down fibres and make them easier to digest and wayyy tastier. Then add the roasted veggies, tuna pesto mix as well. Top with some more pumpkinseeds and olives!

I promise you, it may seem like a lot, but it's so quick and easy! Feel free to add pasta as well if you feel like or some quinoa would be great too!
