SPICY CREAM CHEESE AVOCADO STUFFED SWEET POTATO | vegan & gluten-free




Looking for an easy savoury breakfast or brunch or lunch recipe? Perhaps for dinner as well šŸ¤£? Guys, stuffed sweet potatoes šŸ  are one of my favourite foods on the planet šŸ¤¤ (next to granola, chocolate, nut butter, oats, cookies, pancakes... ok we can go on šŸ„²) and this combination is just to dieeeeee fooorrr šŸ¤¤šŸ¤¤. The combination of the spicy cream cheese šŸŒ¶ with the creamy avocado šŸ„‘ all stuffed into a delicious hot caramel sweet potatoe šŸ  is just about EVERYTHING YOU WANT šŸ¤¤šŸ¤¤šŸ¤¤! It's soooo easy to make and you can batch make more portions to have for multiple days in a row!! For some crunch I added some roasted edamame beans on top šŸŒ± which also provide a lot of healthy protein šŸ’ŖšŸ». I promise this recipe is absolutely fabulous!


More about this combination...

As I already wrote above, what makes this recipe so special? Well basically you can eat it any time of the day! For breakfast, brunch, lunch, snack, dinner,... endless options šŸ™ƒ. So for my savoury breakfast girls and boys: GOT YOU šŸ’ŖšŸ»! I tried this combination the other day on bread and then I immediately thought of trying this in a sweet stuffed sweet potatoe!

I baked mine in the oven for 45 min but you can also MICROWAVE THE SWEET POTATOE FOR 8-10 MIN! Depending on the size! But I prefer roasting (or if you have an airfryer, šŸ„ŗ use thatšŸ™‹šŸ»ā€ā™€ļø! So the sweet potatoe becomes caramelised šŸ¤¤šŸ¤¤šŸ¤¤šŸ¤¤šŸ¤¤.


I'm literally drooling behind my screen when I'm typing this šŸ¤£. It's absolutely an incredible combination with the spicy cream cheese! I'm absolutely obseeeessed with this! I used the one from Wild West Land (best cream cheese you can ever find and vegan toošŸŒ±)šŸ‘‡šŸ».

As you know I'm in loveee with edamame in combination with avocado too! šŸŒ±šŸ„‘ Ever since I discovered these crunchy roasted edamame beans from @koro_nl I've been solllddddd šŸ¤¤. They are incredibly tasty and soooo nutrient dense!! I'll link them below šŸ‘‡šŸ»!


Well, some substitution ideas Jen?

If you don't have some of these at home, here are some changes you can make:

  • Sweet potatoe: if you don't have sweet potatoe, just use any type of bread you like! Sourdough works perfect with this too!

  • Spicy Vegan Cream cheese: not a fan? Or don't have it in your country? Well use any (vegan) cream cheese of choice!

  • Avocado: not an avocado fan? Switch it for hummus or baba Ganoesh! Works fine too!



LET'S GET COOKING!


SPICY CREAM CHEESE AVOCADO STUFFED SWEET POTATO

(vegan & gluten-free)

ā°50 min (45 min baking + 5 min work)

INGREDIENTS (1 portion):

ā–Ŗļø1 large sweet potatoe

ā–Ŗļø2 tbsp of spicy vegan cream cheese

ā–Ŗļø1/2 avocado

ā–Ŗļøsalt & black pepper @koro_nl

ā–Ŗļø1 tsp of lemon juice

ā–Ŗļø1 hand full of salad leaves

Topping: chili flakes, roasted edamame beans @koro_nl


Method:

1ļøāƒ£Preheat the oven to 200C. Then poke some holes in the sweet potatoe and let this bake in the oven for about 45 minutes.

2ļøāƒ£In the mean time, mash the avocado, add salt & black pepper to taste and the lemon juice.

3ļøāƒ£Once the sweet potatoe is done, add in the spicy vegan cream cheese, then the avocado smash. Serve on some salad leaves and top with some chili flakes, roasted edamame beans & spring union! Bon Appetit! šŸ¤¤
