Guys, STOP SCROLLING ✋. This HEALTHY cheesecake is ABSOLUTELY AMAZING 🤩. I always wanted to create a CHEESECAKE without tons of added sugars, butters, dairy, gelatinous etc. And I think I nailed it! Ofcourse to make it entirely clean, you should skip the vegan M&M's or use a healthier sugar free version, but of course some sugar occasionally will not kill you 🙃.
I tell you, this cake will steal any possible show. Make it for Christmas 🎄 or Sinterklaas (just add some pepernoten on top and you're good to go ☺️)
✨THE ULTIMATE HEALTHY M&M CHEESECAKE *YOU NEED THIS* (VG + GF + SF)✨
🍫Ingredients Base:
◾️ 150g rolled oats @meesters_van_de_halm
◾️ 200g unpitted dates (soaked in hot water) @koro_nl
◾️ 1 pinch of salt
◾️ 3 tbsp cacao powder @koro_nl
◾️ 2 tbsp coconut oil
◾️ 120g roasted peanuts 🥜 @koro_nl
🍫Ingredients filling:
◾️ 1 can of full-fat coconut milk
◾️ 200g vegan dark chocolate
◾️ 3 tbsp agave syrup (add more if you use very dark choc)
◾️ 1 pinch of salt
Extra: add vegan M&Ms @handsoffmychocolate
👩🏻🍳Method:
1️⃣Mix all the base ingredients together in a blender. Once everything is blended, grease a 20 cm cake pan with coconut oil and make a base form.
2️⃣Heat up all the filling ingredients in a sauce pan and make sure to form a delicious chocolate sauce. This will be our cheesecake filling.
3️⃣Pour the hot chocolate mixture in the base, add some vegan M&Ms if you want and set it in fridge for at least 4 hours.
4️⃣Top it off with some more vegan M&Ms and enjoy! 😊
