Spirulina Noodle Stirfry with Miso Marinated Tofu

se noodles made with spirulina? Spirulina is a blue-green algae, and is believed to be one of the oldest life forms on Earth.

First used by the Aztecs as an endurance-booster, spirulina is considered a superfood — an all-in-one source of nutrients including protein levels comparable to eggs.

So definitely get your spirulina and start cooking!


Ingredients (2 portions):

  • 300g spinach

  • 150 bokchoy

  • 1 sweet red bell pepper

  • 160 spirulina pasta @kazidomi.com

  • 1 tsp sesame oil

  • 1 tsp coconut oil

  • 1 tbsp black sesame seeds

  • 1 piece of ginger

  • 1 tbsp coconut aminos/soy sauce

  • salt & black pepper

  • 250g miso tofu (recipe in my e-book)

Method:

  1. Wash and cut the bokchoy into small pieces (preferable break them with your hands instead of cutting).

  2. Half the bell pepper and sprinkle some salt & black pepper as well as 1 tsp sesame oil on top.

  3. Bake the bell pepper in a preheated oven on 200 degrees for 15-20 minutes.

  4. In a pan, heat up some coconut oil with a piece of ginger.

  5. Add the spinach and bok choy and the soy sauce/coconut aminos.

  6. Let it cook for about 3-5 minutes until the spinach is wilted.

  7. Make the miso tofu according to the instructions of my e-book or add some other type of tofu ;)

  8. Boil the pasta according to the package instructions.

  9. Assemble the bowl: add the spinach/bokchoy, pasta, tofu, bell pepper & sprinkle some black pepper & black sesame on top!
