Spirulina, do you know what that is?
Spirulina is a type of cyanobacteria — often referred to as blue-green algae — that is incredibly healthy. It may improve your levels of blood lipids, suppress oxidation, reduce blood pressure and lower blood sugar.
So the more reason to include this powerful plant into your diet!
Here is my delicious noodle bowl recipe!
Ingredients (2 portions):
160g spirulina noodles @kazidomi.nl
300g spinach
200g pakchoy
2 sweet red bell peppers
1 tbsp olive oil
1 tbsp sesame oil
marinated tofu (I used my miso tofu from my book!)
1 tbsp black sesame seeds
2 tbsp soy sauce @kazidomi.nl
1 tbsp coconut sugar @kazidomi.nl
1 small piece of ginger
salt & black pepper
Method:
Wash the vegetables and break the pakchoy into smaller pieces. Breaking is better than cutting as it prevents the fibres breaking unnaturally and keeps it crunchy! Cut the red bell peppers in half and remove the seeds.
Preheat the oven to 180 degrees and drizzle 1 tbsp olive oil over the bell peppers. Let them then bake in the oven for about 20 minutes.
Meanwhile, heat up 1 tbsp sesame oil in a pan and add a slice of ginger. Saute this for about 30 seconds and then add the veggies. Make the sauce by combining soy sauce, coconut sugar together in a bowl and add the sauce to the veggies and let it simmer for about 2-3 minutes until the spinach has wilted.
Cook the noodles according to the package instructions.
Make the marinated tofu according to the instructions in my cookbook or use another protein source!
Assemble the bowl! Add the veggies, noodles, tofu & bellpepper, sprinkle some black sesame seeds on top and you're ready to go!
