ALMOST THAT DAY OF THE YEAR GUYS šŗš»šš» the dayyy of LUFFFFF ā¤ļøš
Yeah, guys, CAN YOU BELIEVE THAT THESE MMUFFINS ARE FREAKING HEALTHY??? and That there is NO FLOUR IN THEM?? Well technically speaking, quinoa & buckwheat are seeds so there you go SO THESE ARE PALEO!, but feel free to swab it for oat flour, regular whole wheat flour or almond flour works too!

ā¤ļøRaspberry White Chocolate filled Muffins (VG & GF & Paleo)š±
š§Ingredients (11-12 muffins):
ā¾ļø 250g of buckwheat / quinoa flour (I used a 50/50 mix of both)*
ā¾ļø 2 tsp of baking powder
ā¾ļø 60g coconut blossom sugar
ā¾ļø 50g grated coconut
ā¾ļø 1 big pinch of salt
ā¾ļø 3 tsp of gingerbread spices
ā¾ļø 160ml of creamy coconut milk (IMPORTANT!!!)
ā¾ļø 100g apple sauce
ā¾ļø 15ml lemon juice
ā¾ļø 150g of (frozen) raspberries
*I just blended buckwheat and quinoa flakes because that's wayyyy cheaper š
Filling: 200g of vegan white chocolate spread @sovegansofinenl
ā¤ļøMethod:
First combine all the dry ingredients together in a bowl. Then add all the wet together. Add both mixtures together, add some more milk if it's too dry. Then fill 3/4 of a muffin form with the batter, add a big tsp of about 15-20g of white chocolate spread in the middle, and cover with more dough. Bake for 25-30 min on 170C in a preheated oven. Let it cool slightly and try not to eat the entire batch in one go!
