RASPBERRY CHOCOLATECHIP CHEESECAKE BANANABREAD (HP + GF + VG)

Bananabread, a classic snack for all of us right? But most banana breads are filled with eggs, butter & milk š„ŗ, so since it's veganuary, I really hope you give this one a try! It's moist & creamy & the raspberries add a juicy surprise in your mouth! š¤¤
āØRASPBERRY CHOCOLATECHIP CHEESECAKE BANANABREAD (HP + GF + VG)š±
Ingredients:
š3 very ripe bananas
ā¾ļø 200ml of thick coconut yoghurt (the creamy version)
ā¾ļø 3 tbsp maple syrup
ā¾ļø 100g (frozen) raspberries
ā¾ļø 1 tsp baking powder
ā¾ļø 200g oat flour
ā¾ļø 1 pinch of salt
ā¾ļø 60g carrot cake/vanilla protein powder* (sub for almond flour)
ā¾ļø 2 tsp gingerbread spices
ā¾ļø chocolate chips
ā¾ļø choose a fluffy šš»
To make it fluffy (choose):
ā¾ļø 1 tsp baking soda + 1 tbsp apple cider vinegar
ā¾ļø 80ml whipped aquafaba
ā¾ļø vegan egg substitutes
Serve with: vegan yoghurt, jam, peanutbutter, cashew butter, chocolate spread etc. š
Method:
Mix everything together. Top with sliced banana & chocolate chips (add some coconut sugar for sweetness). Bake in preheated oven for 50 minutes on 180C. Slice & enjoy!
