RASPBERRY CHOCOLATECHIP CHEESECAKE BANANABREAD (HP + GF + VG)












Bananabread, a classic snack for all of us right? But most banana breads are filled with eggs, butter & milk 🥺, so since it's veganuary, I really hope you give this one a try! It's moist & creamy & the raspberries add a juicy surprise in your mouth! 🤤


✨RASPBERRY CHOCOLATECHIP CHEESECAKE BANANABREAD (HP + GF + VG)🌱

Ingredients:

🍌3 very ripe bananas

◾️ 200ml of thick coconut yoghurt (the creamy version)

◾️ 3 tbsp maple syrup

◾️ 100g (frozen) raspberries

◾️ 1 tsp baking powder

◾️ 200g oat flour

◾️ 1 pinch of salt

◾️ 60g carrot cake/vanilla protein powder* (sub for almond flour)

◾️ 2 tsp gingerbread spices

◾️ chocolate chips

◾️ choose a fluffy 👇🏻


To make it fluffy (choose):

◾️ 1 tsp baking soda + 1 tbsp apple cider vinegar

◾️ 80ml whipped aquafaba

◾️ vegan egg substitutes


Serve with: vegan yoghurt, jam, peanutbutter, cashew butter, chocolate spread etc. 🙃

Method:

Mix everything together. Top with sliced banana & chocolate chips (add some coconut sugar for sweetness). Bake in preheated oven for 50 minutes on 180C. Slice & enjoy!
