Autumn is really happening and the pumpkin is going to be in about every meal I eat š #pumpkinlover haha, š but I combined it into a baked oats as you know, I love my porridge as much as I love pumpkin as well in the fall š. The cherries are an amazing addition! They are sweet and juicy! But you can of course also sub it for apple instead! But since frozen cherries are always available I think you should give it a try! Together with the crunchy pecans it is extremely delicious!
PUMPKIN š PIE BAKED OATS WITH CHERRIES š | VG & GF
š©š»āš³Ingredients:
ā¾ļø 1/2 ripe banana
ā¾ļø 1 big tbsp pumpkin puree (approx 50g) @koro_nl
ā¾ļø 80ml plant milk (I used pea milk) @besproud
ā¾ļø 1 tsp coconut oil
ā¾ļø 50g oats @meesters_van_de_halm
ā¾ļø 1/2 tsp baking powder
ā¾ļø pumpkin spice @koro_nl
ā¾ļø pinch of salt
ā¾ļø vanilla flavourdrops/extract
ā¾ļø 20g of pecans @koro_nl
ā¾ļø 100g (frozen) cherries
šMethod:
Mash the banana, then mix in the pumpkin puree, plant milk, vanilla extract & coconut oil.
Add the oats, baking powder, spices and mix as well. If your banana is not sweet enough add some syrup or sugar as well.
Set aside a few pecans for decoration. Chop the pecans and add the rest into the dough together with the cherries. š.
Pour it into an oven safe dish or bowl. Sprinkle with a little coconut sugar, top with the remaining pecans & some cherries and let it bake in the oven for about 25-30 minutes on 180C. This will make it caramelise!
Enjoy! Tip: add a piece of dark chocolate in the middle to make an even more delicious meal!
