HANDS UP IF YOU HATE DOING DISHES! I definitely definitely hate that XD! So this ONE BOWL muffins are just amazing for that! No sweeteners needed, just our old friend banana + chocolate will always do ;). The nuts add a crunch, the chocolate a melty melt, the blueberries some sweetness and the banana extra fluffyness. NO excuses not to make these! Also you could just eat them all 4 for breakfast ;) so no worries about storage haha!
Ingredients (4 muffins):
1 ripe banana + extra few slices for topping
1 egg (or sub for 1 flaxegg for vegans)
30g almond flour + 30g oat flour
cinnamon + 1 pinch of salt
25g raisins
25g chopped nuts
30g chocolate chips @kazidominl
1 tsp baking powder
50g (frozen) blueberries
1 tbsp coconut sugar for topping (and more if you prefer sweeter muffins)
coconut oil for greasing
Method:
Mix the banana, egg, cinnamon, baking powder together until you get a smooth batter.
Add in the almond flour, oat flour, raisins, chopped nuts, chocolate chips and stir in the blueberries as well.
Grease muffin cups with some coconut oil and spoon the batter inside. Then add some slices of banana and sprinkle with 1 tbsp coconut sugar for a caramel topping. Also add some more chocolate chips on top ;).
Let these babies bake in the oven on 180 degrees for 30 minutes and allow to cool down for 15 minutes (I know very hard...). THEN DIG IN MY FRIENDS!

Nederlands recept:
Ingrediënten (4 muffins):
1 rijpe banaan + extra paar plakjes voor topping
1 ei (of sub voor 1 lijnzaad ei voor veganisten)
30 g amandelmeel + 30 g havermeel
kaneel + 1 snufje zout
25 g rozijnen
25 g gehakte noten
30g chocolate chips kazidominl
1 tl bakpoeder
50 g (diepvries) bosbessen
1 el kokossuiker als topping (en meer als je de voorkeur geeft aan zoetere muffins)
kokosolie om in te vetten
Methode:
Meng de banaan, ei, kaneel, bakpoeder tot een glad beslag.
Voeg het amandelmeel, havermeel, rozijnen, gehakte noten, chocoladeschilfers toe en roer ook de bosbessen erdoor.
Vet muffinvormpjes in met wat kokosolie en schep het beslag erin. Voeg vervolgens wat plakjes banaan toe en bestrooi met 1 el kokossuiker voor een karameltopping. Voeg ook nog wat chocoladeschilfers toe ;).
Laat deze schatjes 30 minuten bakken in de oven op 180 graden en 15 minuten laten afkoelen (ik weet heel moeilijk...). ENJOY!
