Finally there it is, one of my favourite dinners. I swear I make this definitely once a week! It's perfect for meal prep as well! The combination of the crunchy roasted garlic sweet potatoe with the salty-peanut butter chicken and crunchy green beans is EVERYTHING š¤¤š¤¤š¤¤ I'm literally drooling while I am typing this š¤£. The creamy coconut milk adds some more healthy fats and creamy-ness to the dish that definitely makes it even better šš„. As a topping I used some fresh mint and crunchy peanuts for texture!
Nourish bowls are one of my favourite dinners to eat as you can vary with them so much! It's so simple to meal prep on a Sunday or any other day in the week and you can make as much of it as you want! What makes this bowl so good, is that without you knowing, you get a good portion of veggies in š¤¤ so perfect if you want to trick some children into eating more vegetables š¤£. Also in this bowl I used vegan chicken, but of course if you eat regular chicken you can always use that! That's why this bowl is also very fitness friendly šŖš» so if you are really looking into macros and all those things, this bowl fits perfect in your diet!
Health benefits of sweet potatoe
Sweet potatoe is one of the most healthiest foods on the planet. Did you know that the oldest people in the world grew up eating a lot of sweet potatoes? š They are one of my favourite foods as well! But be warned: they do contain "MANNITOL" in large portions, so if you follow a low-fodmap diet, I suggest swapping half of the portion of sweet potatoe for regular potatoes! This is so you can definitely reduce your symptoms! Here I will give you a few more reasons why sweet potatoe is definitely a good food to eat:
Just one sweet potato gives you 400% of the vitamin A you need each day. This helps keep your eyes healthy as well as your immune system, your body's defense against germs.It's also good for your reproductive system and organs like your heart and kidneys

O no, you don't have some of the things at home? Well let me give some suggestions for substitutes?
Sweet potatoe: well in case you follow a low for-map diet, it might be wise to swap these for regular potatoes! Works just as well and is absolutely delicious as well! Or pumpkin if you have that!
Vegan Chicken: in case you do not eat vegan, swap for regular chicken! Tastes amazing too! Another substitute would be tofu, that would work too!
Peanut butter: not a fan of this nut? š„ swab for any other nutbutter: tahini, almond butter, it all works! Or sunflower-seed butter if you do not eat nuts š
Green beans: I used green beans in this recipe, but feel free to use any other vegetable you have at home: red bell peppers, spinach, zucchini, eggplant... the floor is yours!

SWEET POTATOE CHICKEN NOURISH BOWL with Mint
INGREDIENTS (2 portions):
(vegan & glutenfree & gutfriendly/low-fodmap)
ā°30 min (easy)
āŖļø500g of sweet potatoe (or as much as you want)
āŖļø1 package of vegan chicken
āŖļø400g of green beans
āŖļø40g of peanutbutter
āŖļø150ml of creamy coconut milk
āŖļøsalt, black pepper, smoked paprika powder
āŖļø3 tbsp of garlic olive oil*
toppings: fresh mint & crunchy peanuts
*no garlic olive oil? Use 3 tbsp of normal olive oil + 2 cloves of garlic
Method:
1ļøā£Preheat your oven to 200C. Wash and cut the sweet potatoe into smaller cubes/wedges. Drizzle 2 tbsp of garlic olive oil on top, with some salt & black pepper.
2ļøā£ Line a baking tray with baking paper, add the sweet potatoe and let this bake for about 25 minutes on 200C until done.
3ļøā£ Wash and cut the green beans into smaller pieces. Heat up 1 tbsp of garlic olive oil in a pan and add the beans. After 1-2 min, add in the vegan chicken as well. Let this sautĆ© for about 2 minutes.
4ļøā£Now add in the rest: creamy coconut milk, black pepper, salt to taste, paprika powder & of course the peanutbutter! š„ Let this cook for another 2 minutes.
5ļøā£Assemble the bowls!Add the peanutbutter-chicken-bean mixture, the roasted sweet potatoe and top with some fresh mint & crunchy peanuts! Bon Appetit!
