LEAN: RASPBERRY CHEESECAKE PEANUTBUTTER BERRY PROTEIN ICE CREAM CAKES





Guysss, I CANNOT BELIEVE THAT THE ONE AND ONLY @LILLYSABRI reached out to me and asked me if I wanted to try her AMAZING LEAN PRODUCTS šŸ„ŗšŸ„ŗšŸ„ŗ . Honestly, despite that the pancake mixture contains wheat (gluten-free girl šŸ„²) I AM ABSOLUTELY IN LOVE WITH HER PRODUCTS!!!


Honestly FINALLY FINALLLY FINALLLLYYYYY a brand with some good porridge blends with protein and no weird shit šŸ„ŗšŸ™‹šŸ»ā€ā™€ļø YOU don't know how happy I am with this ā¤ļø It's so necessary that more companies produce these kind of products! The LEAN range is of course not only porridge and pancake mixes, but Lilly has protein powders (girl I need them šŸ¤£), protein bars, mats, @lindasun amazingggggg baaanddsss (I need those šŸ„²) and so much more!


Familia, you gotta try all the LEAN products!! I mean, Lilly, you DESERVE SOME RECOGNITION FOR THESE!! Therefore, I decided to create an amazing recipe for you guys! RASPBERRY CHEESECAKE PEANUTBUTTER BERRY PROTEIN ICE CREAM CAKES!!


How did I come up with this combination? Well from the moment I smelled the berry porridge I immediately thought of combining it with some coconut yoghurt and fresh berries! Of course not forget the peanut butter šŸ„œšŸ„œšŸ„œ sooo... then my genius brain šŸ™ƒ came up with this! I tell you, you have a soft porridge base (which is more cake-like if you quickly bake it) topped with a fresh coco-raspberry yoghurt base and then of course the peanutbutter & chocolate on top! I tell you, the creamy yoghurt layer with the porridge, the peanut butter and the crunchy chocolate on top is just everythingšŸ¤¤šŸ¤¤šŸ¤¤šŸ¤¤šŸ¤¤šŸ¤¤šŸ¤¤ I'm drooling behind my computer šŸ¤£. So, shall we make some?


Substitutions

Sooooo you don't have any of the ingredients at home?

  • Banana: not a banana lover?? Then try using sweet potatoe mash! Or maybe apple sauce? Pumpkin puree works too! If you don't like any of that just add plant milk + syrup šŸ™‹šŸ»ā€ā™€ļø.

  • Peanut butter: well, Linda would kill you for this šŸ¤£šŸ¤£šŸ¤£ buuuttt for my peanutbutter haters, try any other nutbutter of choice šŸ™ƒ almond, cashew, coconut, pistache,... endless options.

  • Coconut Yoghurt: not a coco-yog fan? Well, any yoghurt works! But make sure it's a thick one! Like Greek yoghurt, oat yoghurt of any (plant-based) quark or skyr works great too! But of course the taste will be a little different šŸ™ƒ.

  • Raspberries: if you don't have raspberries, blueberries or strawberries work fine too! If you do strawberries, cut them into little pieces.

  • LEAN berry porridge: if you don't have Lilly's masterpiece porridge blend at home... then, I suggest just using 80g of oats + 10g of chia + 10g of any freeze-dried fruit of choice + 40g of any protein powder of choice!


LEAN: RASPBERRY CHEESECAKE PEANUTBUTTER BERRY PROTEIN ICE CREAM CAKES

INGREDIENTS (5 muffins):

(vegan & glutenfree)

ā°15 min + 2h freezer

ā–Ŗļø120g of @leanwithlilly super berry porridge

ā–Ŗļø120g of ripe banana (about 1 large one)

ā–Ŗļø3 tbsp of peanutbutter

ā–Ŗļø200g of coconut yoghurt

ā–Ŗļø100g of (frozen) raspberries

ā–Ŗļø5 tbsp of peanutbutter

ā–Ŗļøcacao nibs


Method:

1ļøāƒ£Mash the banana with a fork and add the berry porridge to the mixture. If the mixture is too wet, add more porridge, if too dry, add more banana šŸ¤£.

2ļøāƒ£Mix the coconut yoghurt with the raspberries.

3ļøāƒ£Take some muffin cups, and place a layer of the banana-porridge mixture at the bottom. Optional to bake it for 10 min in the oven (if you want more of a cake base), but if you don't it's more an overnight oats layer? šŸ™ƒ Then add the coconut-raspberry mixture on top. Top with 1 tbsp of PB šŸ„œ on each cake and add some cacao nibs (or chocolate works too šŸ¤¤).

3ļøāƒ£Freeze for 2h. Let them thaw for 5-10 min so the middle becomes a bit softer! ENJOYšŸ¤¤šŸ¤¤šŸ¤¤
