JAM-FILLED CHRISTMAS MUFFINS WITH BANANA-FLOUR (GF + VG)






✨6th day of December, SO TIME TO BAKE SOME CHRISTMAS MUFFINS!✨


Banana 🍌 haters, maybe you should not read this post 😆. These muffins are made with PLANTAIN flour aka bakbananenmeel (in dutch 🇳🇱), but honestly, you don't really taste the banana flavour that strong 😆. @puurmieke sells amazing gluten-free, sugar free & healthy food, beauty & so much more! I created these muffins using her products! Super easy, and definitely worth a try!


✨JAM-FILLED CHRISTMAS MUFFINS WITH BANANA-FLOUR (GF + VG)✨

👩🏻‍🍳Ingredients (7 big muffins):

◾️ 200g plantain flour

◾️ 50g almond flour

◾️ 70g strawberry jam

◾️ 2 flax-eggs (2 tbsp flax + 6 tbsp water)

◾️ 1 tsp baking powder

◾️ 50g peanutbutter

◾️ 80g palm sugar

◾️ 1 biiiig tsp gingerbread spices

◾️ 150ml almond milk

◾️ 1 pinch of salt


🧁Method:

  1. Preheat the oven to 180C. Add the flours, baking powder, sugar, spices, salt together in a bowl and stir until evenly combined.

  2. Then add in the milk, flax-eggs, peanutbutter and stir until you get a muffin dough. If it's too dry, add more milk, if too wet, add more flour. Line a muffin form tray with muffin forms. If you like it more sweet add more sugar ;).

  3. Add a big tbsp of the mixture in each of the muffin forms and then add a tsp of the jam in the middle (approx 10g) and then close off with another big tbsp of the muffin dough. Sprinkle a little more coconut sugar on top! Let the muffins bake for ~25 minutes on 180C.

  4. Cool & ENJOY! 😊

✨These muffins taste absolutely incredible! Definitely worth a try as it uses a different flour than we are used to! ✨
