Tiramisu, an Italian special which is usually made with lots of biscuits and mascarpone cream. My mom loves tiramisu and that is why, I wanted to create a healthy vegan & glutenfree version that can be enjoyed WITHOUT ANY GUILT but still tastes AMAZING!
So put on your apron and GET COOKING!
Ingredients:
60g oat flour
20g coconut sugar (add more if you want it a bit more sweeter)
1 tsp baking powder
1 pinch of salt
50ml coconut milk
250g coconut yoghurt (I used Greek style make sure it's THICK)
1 tsp lemon juice
50ml coffee/espresso
200g vegan cream cheese
60g maple syrup
vanilla
2 tsp raw cacao powder
Method:
Preheat your oven to 180 degrees C.
Mix the oat flour, coconut sugar, baking powder and salt together in a bowl.
Mix all the wet ingredients in a separate bowl, so the coconut milk, 50g of coconut yoghurt, lemon juice & vanilla extract.
Combine both mixtures together until everything is evenly mixed and let it rest for 10 minutes.
Brew your coffee and set is aside.
Line a baking tray with parchment paper and make a huge 'pancake' of your dough which is about 1 cm thick. Let it bake for 20-30 minutes.
After it's done, let it cool down completely.
Now we make the cream: mix together the remaining coconut yoghurt with the vegan cream cheese, maple syrup and vanilla extract and let it rest in the fridge. Make sure to use a handmixer for extra CREAMY effects!
After 20 minutes, let's make our tiramisu! So cut the pancake into long strips and dip the strips in your coffee to make the first layer. Then add a thick layer of the cream and add another layer of the strips and more cream cheese.
Let it then sit in the fridge for at least 3 more hours and then sprinkle some cacao powder and you're ready to go!
