Tiramisu, an Italian special which is usually made with lots of biscuits and mascarpone cream. My mom loves tiramisu and that is why, I wanted to create a healthy vegan & glutenfree version that can be enjoyed WITHOUT ANY GUILT but still tastes AMAZING!
So put on your apron and GET COOKING!
Ingredients:
- 60g oat flour
- 20g coconut sugar (add more if you want it a bit more sweeter)
- 1 tsp baking powder
- 1 pinch of salt
- 50ml coconut milk
- 250g coconut yoghurt (I used Greek style make sure it's THICK)
- 1 tsp lemon juice
- 50ml coffee/espresso
- 200g vegan cream cheese
- 60g maple syrup
- vanilla
- 2 tsp raw cacao powder
Method:
- Preheat your oven to 180 degrees C.
- Mix the oat flour, coconut sugar, baking powder and salt together in a bowl.
- Mix all the wet ingredients in a separate bowl, so the coconut milk, 50g of coconut yoghurt, lemon juice & vanilla extract.
- Combine both mixtures together until everything is evenly mixed and let it rest for 10 minutes.
- Brew your coffee and set is aside.
- Line a baking tray with parchment paper and make a huge 'pancake' of your dough which is about 1 cm thick. Let it bake for 20-30 minutes.
- After it's done, let it cool down completely.
- Now we make the cream: mix together the remaining coconut yoghurt with the vegan cream cheese, maple syrup and vanilla extract and let it rest in the fridge. Make sure to use a handmixer for extra CREAMY effects!
- After 20 minutes, let's make our tiramisu! So cut the pancake into long strips and dip the strips in your coffee to make the first layer. Then add a thick layer of the cream and add another layer of the strips and more cream cheese.
- Let it then sit in the fridge for at least 3 more hours and then sprinkle some cacao powder and you're ready to go!
HAVE A GREAT MOTHERSDAY AND LET ME KNOW WHAT'S YOUR MOM'S FAV DESSERT?
Lots of love,
Jenny
