HEALTHY PUMPKIN PIE CHEESECAKE | PALEO & GLUTENFREE






✨PUMPKIN PIE + CHEESECAKE. WELL, GUYS, THIS IS A MATCH MADE IN HEAVEN!😇

Normally cheesecakes are made full of cream and sugars and tons of butter and whatever there is in there... But this one, is not! It's clean and healthy and I even added collagen protein to boost the nutrients! Can you guess? You won't taste it, but it does add tons of health benefits! Here is the recipe!😇


👩🏻‍🍳Ingredients base:

◾️15g almond flour

◾️25g rolled oats

◾️1 tsp vanilla extract

◾️1 tsp maple syrup

◾️1 pinch of salt + cinnamon

◾️1 big tbsp thick coconut yoghurt


👩🏻‍🍳Ingredients cheesecake:

◾️100g pumpkin puree

◾️2 tbsp coconut yoghurt

◾️1 scoop chocolate collagen protein* @myproteinnl

◾️1 tbsp chiaseeds

◾️1 tbsp maple syrup @koro_nl


👩🏻‍🍳Method:

  1. Add all the base ingredients together in a bowl and mix it together until you get a thick dough. Then line a cake tin with parchment paper and coat the sides with coconut oil. Add the base in there and let it bake in a preheated oven for 15 minutes on 180 degrees.

  2. Add all the other ingredients together except the coconut yoghurt, this guy we swirl in at the end. When the base is done, pour it over and let it bake for another 15 minutes.

  3. Set it in the fridge for 2 hours and tadaaaaa enjoy! The sides will get caramelized which is soooo good!
