HEALTHY PUMPKIN 'KRUIDNOTEN' (VG + GF + SF) *YOU NEED TO TRY*






OMG GUYS, ya girl did it! šŸŽ‰ In The Netherlands it's every year a tradition called 'Sinterklaas' where we give each other presents and stuff. Bit complicated to explain but I think Google does a great job: šŸ‘.


Every year we have tons of delicious goodies that we eat with the celebration like 'kruidnoten, speculaas, pepernoten, chocoladeletter' and blablabala. Ever since I had to eat gluten-free and vegan I never found a healthy version of these. Well, at least not without sugar or oils.


It's of course COMPLETELY FINE TO EAT THEM! But I wanted to make one with NO OILS. NO SUGAR. NO GLUTEN. NO DAIRY.


And since I'm PUMPKIN šŸŽƒ queen, why not add some pumpkin in it?šŸ˜


āœØHEALTHY PUMPKIN 'KRUIDNOTEN' (VG + GF + SF)āœØ

Ingredients (about 25 pieces):

ā—¾ļø 120g oat flour**

ā—¾ļø 3 tsp gingerbread spices @koro_nl

ā—¾ļø 40g almond butter @koro_nl

ā—¾ļø 100g medjool dates* @koro_nl

ā—¾ļø 1 tsp baking powder

ā—¾ļø 60g pumpkin puree

ā—¾ļø splash of almond milk (about 60-80ml depends on how wet the dough is)

ā—¾ļø 1 pinch of salt

ā—¾ļø 50g vegan dark chocolate šŸ« (add more if you want more chocolate covered ones)

*add more dates if you want them sweeter :)

**sub for almond flour for a paleo version


šŸ‘©šŸ»ā€šŸ³Method:

  1. Mix the oat flour with the gingerbread spices, salt and baking powder together in a bowl.

  2. Mash the dates or blend them into a paste.

  3. In a separate bowl mix the almond butter, date paste, pumpkin puree, together. Then add the almond milk and stir again.

  4. Add the pumpkin-date-almondbutter mixture to the dry Ingredients and mix them together to a thick dough.

  5. Form little cookies from the dough and let them bake in a preheated oven on 180C for about 15 minutes until done. Let them cool afterwards.

  6. If you want dark chocolate covered kruidnoten. Melt some vegan dark chocolate and once the kruidnoten are cooled cover them with the chocolate. Let this cool.

  7. Devour the lot (try not to eat everything at once šŸ˜†)
