Well, I alwaayyyss wanted to make mochi myself, but I was sooooo stupid š¤¦š»āāļø to freaking forget to buy glutinous rice flour... Soooo I did a little experiment and man o man it turned out freaking amazing! I must say, I'm a chef š©š»āš³šš»āāļø.
Normal mochi has lots of syrups, maltose, sugar, milk and idk what else, so this version is full of that too ā”ļø (joking of course), but instead I used some healthy alternatives and the taste is pretty bomb!
š±HEALTHY MATCHA BLACK SESAME MOCHI (GF & VG)
Filling:
ā¾ļø 100g toasted (!) black sesame seeds @koro_nl
ā¾ļø 40g coconut sugar (add more for taste) @koro_nl
ā¾ļø pinch of salt
ā¾ļø splashes of water
Mochi:
ā¾ļø 150g rice flakes pulsed into rice flour
ā¾ļø 50g oat flour
ā¾ļø 1 tbsp matcha @nekohama
ā¾ļø 30g coconut shreds
ā¾ļø 60g coconut sugar
ā¾ļø splashes of water
Method:
1ļøā£Prepare the filling. Make sure to toast the black sesame seeds for 6-7 min of low heat for a fragrant delicious taste š¤¤. Then blend with all the other ingredients together till a fine powder and add some splashes of water to form a thick dough.
2ļøā£Add the rice flour, oat flour, matcha, coconut shreds, coconut sugar together in a pan and heat it on medium heat with some splashes of water till a thick dough.
3ļøā£Fun part: make little balls: roll out with a rolling pin and add a big tsp of the black sesame filling in the middle. Fold to close.
4ļøā£Steam these for 5 minutes and enjoy! š Optional to add some more coconut shreds & a little syrup on top!
Easy right? 𤤠Next time I will make a more traditional version!
