Well, I alwaayyyss wanted to make mochi myself, but I was sooooo stupid 🤦🏻♀️ to freaking forget to buy glutinous rice flour... Soooo I did a little experiment and man o man it turned out freaking amazing! I must say, I'm a chef 👩🏻🍳💁🏻♀️.
Normal mochi has lots of syrups, maltose, sugar, milk and idk what else, so this version is full of that too ⚡️ (joking of course), but instead I used some healthy alternatives and the taste is pretty bomb!
🌱HEALTHY MATCHA BLACK SESAME MOCHI (GF & VG)
Filling:
◾️ 100g toasted (!) black sesame seeds @koro_nl
◾️ 40g coconut sugar (add more for taste) @koro_nl
◾️ pinch of salt
◾️ splashes of water
Mochi:
◾️ 150g rice flakes pulsed into rice flour
◾️ 50g oat flour
◾️ 1 tbsp matcha @nekohama
◾️ 30g coconut shreds
◾️ 60g coconut sugar
◾️ splashes of water
Method:
1️⃣Prepare the filling. Make sure to toast the black sesame seeds for 6-7 min of low heat for a fragrant delicious taste 🤤. Then blend with all the other ingredients together till a fine powder and add some splashes of water to form a thick dough.
2️⃣Add the rice flour, oat flour, matcha, coconut shreds, coconut sugar together in a pan and heat it on medium heat with some splashes of water till a thick dough.
3️⃣Fun part: make little balls: roll out with a rolling pin and add a big tsp of the black sesame filling in the middle. Fold to close.
4️⃣Steam these for 5 minutes and enjoy! 😉 Optional to add some more coconut shreds & a little syrup on top!
Easy right? 🤤 Next time I will make a more traditional version!
