Well guys, Easter š„š£ is approaching right? Soooo, there are eggs, eggs and eggs everywhere š. Chocolate eggs, normal eggs, coloured eggs, poached eggs, boiled eggs, vegan eggs, no-eggs, sugary eggs, no-gender eggs, gender-neutral eggs, you name it š§.
Soooo since the most conventional Easter treats are of course extremely delicious and you should definitely eat them! š¤¤ I wanted to give you another 'healthy' version š to balance it out! These Easter 'eggs' are made from, you guessed it: MEDJOOL DATES š¤¤. I absolutely love love love medjool dates š they are such an incredible delicious fruit that tastes like caramel š¤¤.
So what makes these so special? š§ I can hear you thinking already. Well, the special part is due to the fact that we stuff these dates with: VEGAN COOKIE DOUGH šŖ and top it with some VEGAN NUTELLA š«. Doesn't that sound like heaven? š. Well I tell you, it is! The gooey cookie dough in combination with the caramel date and the chocolatey nutella on top is just absolutely BREATHTAKING DELICIOUS š¤¤š¤¤š¤¤.
Why Medjool dates? What are their health benefits?
Medjool dates are regarded as the QUEEN OF ALL DATES šøš». Did you know that? I used the dates from @naturally_pam which are the most juicy and delicious dates I ever tasted .š¤¤ They are sooo big and juicy! Definitely worth a try! They are naturally sweetened and therefore you don't need to add a lot more sugar to this recipe!
Medjool dates can help you increase the potassium in your diet, supporting these nervous system functions. The B vitamins in Medjool dates like pantothenic acid, folate, and niacin help manage the metabolic processes that convert food to energy. Research shows this can help to fight tiredness and fatigue!
In addition, they really 'keep things going', so are definitely good for your gut too!
Some suggestions for substitutes
In case you're wondering if you can substitute one of the ingredients in this recipe for something else, here are some other suggestions!
Oat flour: if you follow a paleo diet or are just not a big fan of the taste of oatmeal, I suggest swapping this for almond flour! This flour is also super high in protein and tastes amazing!
Coconut sugar: in this recipe I used my favourite type of granulated sweetener, namely coconut sugar. I prefer this over regular sugar, but in case you don't have it, sub it for any other granulated sugar of choice! Brown sugar would be a great alternative!
Nutbutter: allergic to nuts? Or just not a big fan of almond or peanutbutter? Then I suggest trying cashew butter! It doesn't have such a strong taste as almond or peanut butter, but works amazing too! If you're really nut-free, then try tahini (made from sesame) or coconut oil! The cookie dough will taste a little different than using almond or peanuts, but still is amazing!
Barista milk: in this recipe I used Almond barista milk to add some extra creaminess in the cookie dough. Trust me, I tested this recipe at least 5 times to get it perfect, but in case you don't have barista milk at home, oat milk or a creamy coconut milk would be a great alternative!

HEALTHY COOKIE DOUGH STUFFED EASTER EGGS
(vegan & glutenfree & gut-friendly)
Ingredients (15 stuffed dates):
ā°10 min
Cookie dough stuffing:
āŖļø100g of oat flour
āŖļø65g of mixed nutbutter (I used a mix of almond & peanutbutter!)
āŖļø30-45g of coconut sugar (adjust to your own sweetness)
āŖļøbiiiiiggg pinch of salt
āŖļødark chocolate chips (feel free to use as much as you want)
āŖļøfew splashes of Almond BARISTA milk! Makes it more 'creamy' I know sounds weirdš§
Remaining:
āŖļø15 biiiggg medjool dates @naturally_pam or @koro_nl
āŖļø15 tsp of vegan nutella
āŖļømore chocolate chips š«
Method:
1ļøā£First we make the cookie dough stuffing. More simple can't be right? Just mix all the dry ingredients together and add the nutbutter. Lastly add in some splashes of BARISTA milk! Or for alternative use some creamy coconut milk! This really will make a difference in the taste! š¤¤
2ļøā£Unpit all your medjool dates and stuff them with the delicious cookie dough! Top with a tsp of vegan Nutella and if you're feeling it: add some more chocolate chips on top!!
3ļøā£If you can resist the urge: refridgerate for 30 min and then DIGGG INNNN š¤¤
