Matcha + Black sesame, a match(a) made in heaven? I think so šāØ. I had some ripe bananas lying around and they were screaming to made made into Bananabread. Butttt, since it was morning and I was drinking my morning matchašµ, I thought, why not make a matcha Bananabread? š As I absolutely loveee a good slice of Bananabread as snack or part of my breakfast! (or as dessert š¤¤).
It's been a while since I combined both in a recipe and definitely never in my life have I made such a fluffy Bananabread in my life! Inspired by the one and only @sannevloet I created this amazing matcha black sesame Bananabread šš±š! Since she launched the amazing matcha from @NEKOHAMA I've been hooked on it! Their matcha is the cleanest, purest and most delicious matcha I have ever tasted in my life! The smell is even incredible š¤¤š¤¤š¤¤ so I could literally smell this all day š¤Ŗ. Furthermore, I just loveeee the taste of black sesame so much! As a child I used to always eat a lot of black sesame porridge and drink black sesame lattes in China. My grandma and mum are obsessed with it too, therefore I wanted to combine two of my favourite products into one: and it WORKED! The fluffiness of this Bananabread is absolutely next level! and I haven't even talked about the taste š¤¤. I could go on forever on that, but let me just cut a corner and tell you: YOU GOTTA TRY THIS!
Health benefits of Matcha
Why Matcha? Matcha, unlike coffee, contains caffeine and L-theanine, an amino acid which promotes focus~attention~concentration, clarity, relaxation, while reducing stress. Fake matcha
I was searching for some good matcha in The Netherlands, and asked my mum for help. She told me, that actually almost all matcha that you can buy here (even at high prices) are FAKE! They are not matcha, just a green tea. Just like that a cow is an animal, doesn't mean that an animal is a cow. So matcha might be a type of green tea, not all green tea is matcha. Therefore, make sure that your matcha comes from Japan or perhaps China. But the most authentic comes from Japan for sure. So DO NOT BE FOOLED BY MARKETING STUFF! The matcha you buy in supermarkets like Albert Heijn or Jumbo are fake!!

Got any ingredients not at home??
I feel you, you wanna try this amazing matcha bananabread, but you simply don't have a couple of things at home. Let me help you out (if you stil have questions, comment belowšš»):
Black sesame paste: I used the amazing smooth black sesame paste from Koro! But if you don't have it (you can also find it in almost all Asian supermarkets), then you can sub it for almondbutter (which would taste amazing too!), cashewbutter (bit more neutral), tahini (bit more bitter), peanutbutter (bit more strong flavour š¤£), so choose wisely!
Matcha: o no... a matcha bananabread without matcha??? šŖ bit hard... Or just not a matcha lover?? Well, then try swapping it for: COFFEE āļø , the taste will ofcourse be different, but I promise, it will still taste amazing. More like a tiramisu š¤£āļø.
Eggs: I already gave a vegan alternative: 4 flax-eggs + whipped aquafaba (can be left out, but less fluffy) + 1 cup of almond flour extra!
Almond flour: no almond flour at home? You can always ground up some almonds š¤£ or use peanut flour (blend peanuts). Or just regular all-purpose flour works fine too šā¤ļø.
FLUFFY BLACK SESAME MATCHA BANANABREAD (GF + PALEO + VG)šµšš
ā°55 min (10 min prep + 30-45 min baking time)
Ingredients:
āŖļø500g ripe banana (approx 4 large banana's)
āŖļø150g of black sesame paste/tahini
āŖļø4 eggs or sub for 4 flax-eggs + 100ml of whipped aquafaba + 1 cup extra almond flour
āŖļø1/2 cup of almond flour (approx 55g)
āŖļø3 tsp of matcha @NEKOHAMA
āŖļø1 pinch of salt
āŖļø1 tsp of vanilla extract
āŖļø1 tsp of baking powder
āŖļø2 tbsp of coconut oil
optional: for more sweetness add 2 tbsp of maple syrup
toppings: I used almonds, pecans, chiaseeds & few more banana slices
Serve with: MATCHA CASHEWBUTTER š¤¤ + vegan honey!
Method:
1ļøā£Mix the banana, eggs (or flaxeggs+ aquafaba + almond flour) with the coconut oil and black sesame paste together in a blender or food processor.
2ļøā£Add the dry ingredients together in a bowl: almond flour + matcha + salt + baking powder + vanilla extract and mix together.
3ļøā£Add the dry to the wet and mix together everything until fully combined. Line a baking tin with some coconut oil & parchment paper. Add the mixture in this and top with some almonds, pecans, chiaseeds & few banana slices (optional to skip this). Bake this in a pre-heated oven on 175 for about 30-45 min. Check until done (it's highly oven dependent and also the brand of flour you use blablablabla š)
4ļøā£Serve with some matcha cashew butter and a drizzle of vegan honey! š¤¤
