Well, I wouldn't be Jenny If I didn't bake some kind of cookie šŸŖ every week right? šŸ˜† I absolutely loveeee cookies and these are just a YESS!! I used my beloved salted caramel protein powder from @myproteinnl which is just incredible in about every dish šŸ˜† o and the banana šŸŒ is of course present as well, but feel free to swap for apple šŸŽ sauce if you don't like my yellow friend šŸ™ƒ.


DOUBLE CHOCOLATE CHIP SALTED CARAMEL COOKIES (VG & GF & HP)

Ingredients (8 small cookies):

ā—¾ļø 30g oat flour

ā—¾ļø 40g salted caramel protein powder @myproteinnl*

ā—¾ļø 1 pinch of salt

ā—¾ļø 20g raw cacao powder

ā—¾ļø 40g of ripe banana

ā—¾ļø splash of coconut milk

ā—¾ļø 40g (protein) peanutbutter

ā—¾ļø 20g cacao nibs / chocolate chips

ā—¾ļø 2 tbsp of maple syrup

for more sweetness: add 2 tbsp of maple syrup


*sub for 40g of ground almonds/hazelnuts + 20g coconut sugar


Method:

1ļøāƒ£Add all the dry ingredients together except the cacao nibs or chocolate chips (you choose your preference at the end).

2ļøāƒ£Mash the banana and add it together with the peanutbutter & a splash of coconut milk to the dry mixture.

3ļøāƒ£Fold in the chocolate chips/cacao nibs & form small cookies. Let this bake one 170C for about 10 min. Let cool and ENJOY! 😊
