Well, I wouldn't be Jenny If I didn't bake some kind of cookie 🍪 every week right? 😆 I absolutely loveeee cookies and these are just a YESS!! I used my beloved salted caramel protein powder from @myproteinnl which is just incredible in about every dish 😆 o and the banana 🍌 is of course present as well, but feel free to swap for apple 🍎 sauce if you don't like my yellow friend 🙃.
DOUBLE CHOCOLATE CHIP SALTED CARAMEL COOKIES (VG & GF & HP)

Ingredients (8 small cookies):
◾️ 30g oat flour
◾️ 40g salted caramel protein powder @myproteinnl*
◾️ 1 pinch of salt
◾️ 20g raw cacao powder
◾️ 40g of ripe banana
◾️ splash of coconut milk
◾️ 40g (protein) peanutbutter
◾️ 20g cacao nibs / chocolate chips
◾️ 2 tbsp of maple syrup
for more sweetness: add 2 tbsp of maple syrup
*sub for 40g of ground almonds/hazelnuts + 20g coconut sugar
Method:
1️⃣Add all the dry ingredients together except the cacao nibs or chocolate chips (you choose your preference at the end).
2️⃣Mash the banana and add it together with the peanutbutter & a splash of coconut milk to the dry mixture.
3️⃣Fold in the chocolate chips/cacao nibs & form small cookies. Let this bake one 170C for about 10 min. Let cool and ENJOY! 😊
