DISSECTED SUSHI BOWL STIR-FRY A LA JEN with mint šŸ¤¤




You know, when you are lazy, it's better to make a bowl out of your meal instead of trying to make things look perfect šŸ˜† at least that's what I tend to do lol šŸ˜ so I was craving a sushi bowl, but then made it a little next level by adding a fresh mint-tahini dressing through it šŸ¤¤. It turned out soo sooo good that I could not not share it right?


DISSECTED SUSHI BOWL STIR-FRY A LA JEN with mint šŸ¤¤ (VG + GF + HP)

ā°15 min

Ingredients (2 portions):

ā–Ŗļø2 portions of sushi rice (about 150g uncooked)

ā–Ŗļø250g of frozen edamame

ā–Ŗļø1 zucchini

ā–Ŗļø4 large carrots

ā–Ŗļø1 tbsp of Chinese shiitake sauce (I get it @amazing_oriental)

ā–Ŗļø1 slice of ginger

ā–Ŗļø1 tbsp of rice vinegar

ā–Ŗļø1 tbsp of soy sauce

ā–Ŗļø1 tbsp of sesame oil

ā–Ŗļø1 tbsp of miso

ā–Ŗļø1 tbsp of coconut sugar


Sauce:

ā–Ŗļø3 tbsp of tahini

ā–Ŗļø1 big handfuls of mint

ā–Ŗļø1 tsp of lemon

ā–Ŗļø1 tbsp of maple syrup

ā–Ŗļøsalt & pepper


Toppings:

ā–Ŗļøfresh mint leaves

ā–Ŗļøroasted black sesame seeds

ā–Ŗļødried mulberries

ā–Ŗļøsushi sea weed (also @amazing_oriental) #nosponjustfan

ā–Ŗļøsushi ginger


Method:

1ļøāƒ£Slice and wash the veggies. Cook the rice and edamame separately according to packaging and feel free to season it using sushi seasoning (or use rice vinegar + soy sauce + sugar). Heat up sesame oil in the pan, add the sliced ginger, veggies, shiitake sauce & all the other stuff. Let this cook for about 3-5 min until the veggies softened. Then add in the sushi rice & edamame.

2ļøāƒ£Add the sauce ingredients together (cut the mint fine or use a blender).

3ļøāƒ£Add the rice, veggies and sauce together and serve with all the toppings you feel like!
