DISSECTED SUSHI BOWL STIR-FRY A LA JEN with mint 🤤




You know, when you are lazy, it's better to make a bowl out of your meal instead of trying to make things look perfect 😆 at least that's what I tend to do lol 😝 so I was craving a sushi bowl, but then made it a little next level by adding a fresh mint-tahini dressing through it 🤤. It turned out soo sooo good that I could not not share it right?


DISSECTED SUSHI BOWL STIR-FRY A LA JEN with mint 🤤 (VG + GF + HP)

⏰15 min

Ingredients (2 portions):

▪️2 portions of sushi rice (about 150g uncooked)

▪️250g of frozen edamame

▪️1 zucchini

▪️4 large carrots

▪️1 tbsp of Chinese shiitake sauce (I get it @amazing_oriental)

▪️1 slice of ginger

▪️1 tbsp of rice vinegar

▪️1 tbsp of soy sauce

▪️1 tbsp of sesame oil

▪️1 tbsp of miso

▪️1 tbsp of coconut sugar


Sauce:

▪️3 tbsp of tahini

▪️1 big handfuls of mint

▪️1 tsp of lemon

▪️1 tbsp of maple syrup

▪️salt & pepper


Toppings:

▪️fresh mint leaves

▪️roasted black sesame seeds

▪️dried mulberries

▪️sushi sea weed (also @amazing_oriental) #nosponjustfan

▪️sushi ginger


Method:

1️⃣Slice and wash the veggies. Cook the rice and edamame separately according to packaging and feel free to season it using sushi seasoning (or use rice vinegar + soy sauce + sugar). Heat up sesame oil in the pan, add the sliced ginger, veggies, shiitake sauce & all the other stuff. Let this cook for about 3-5 min until the veggies softened. Then add in the sushi rice & edamame.

2️⃣Add the sauce ingredients together (cut the mint fine or use a blender).

3️⃣Add the rice, veggies and sauce together and serve with all the toppings you feel like!
