You know, when you are lazy, it's better to make a bowl out of your meal instead of trying to make things look perfect š at least that's what I tend to do lol š so I was craving a sushi bowl, but then made it a little next level by adding a fresh mint-tahini dressing through it š¤¤. It turned out soo sooo good that I could not not share it right?
DISSECTED SUSHI BOWL STIR-FRY A LA JEN with mint š¤¤ (VG + GF + HP)

Ingredients (2 portions):
āŖļø2 portions of sushi rice (about 150g uncooked)
āŖļø250g of frozen edamame
āŖļø1 zucchini
āŖļø4 large carrots
āŖļø1 tbsp of Chinese shiitake sauce (I get it @amazing_oriental)
āŖļø1 slice of ginger
āŖļø1 tbsp of rice vinegar
āŖļø1 tbsp of soy sauce
āŖļø1 tbsp of sesame oil
āŖļø1 tbsp of miso
āŖļø1 tbsp of coconut sugar
Sauce:
āŖļø3 tbsp of tahini
āŖļø1 big handfuls of mint
āŖļø1 tsp of lemon
āŖļø1 tbsp of maple syrup
āŖļøsalt & pepper
Toppings:
āŖļøfresh mint leaves
āŖļøroasted black sesame seeds
āŖļødried mulberries
āŖļøsushi sea weed (also @amazing_oriental) #nosponjustfan
āŖļøsushi ginger
Method:
1ļøā£Slice and wash the veggies. Cook the rice and edamame separately according to packaging and feel free to season it using sushi seasoning (or use rice vinegar + soy sauce + sugar). Heat up sesame oil in the pan, add the sliced ginger, veggies, shiitake sauce & all the other stuff. Let this cook for about 3-5 min until the veggies softened. Then add in the sushi rice & edamame.
2ļøā£Add the sauce ingredients together (cut the mint fine or use a blender).
3ļøā£Add the rice, veggies and sauce together and serve with all the toppings you feel like!
