CRUNCHY GINGERBREAD COOKIES WITH DARK CHOCOLATE šŸ¤¤






Well guys, if you haven't started baking cookies this Christmas, then I think you have to start today! These gingerbread cookies are SUPER CRUNCHY! Like I tested it a couple of times, and they stayed crunchy for 4 days!! (Then they were finished šŸ˜‚ )


Incredibly fun to make and my personal favourite still remains the reindeer and the gingerbread mans šŸ˜† what about you guys? Any activities today??

CRUNCHY GINGERBREAD COOKIES WITH DARK CHOCOLATE šŸ¤¤ (25min)

šŸŖIngredients:

ā—¾ļø 40g oat four

ā—¾ļø 60g teff / buckwheat / spelt flour

ā—¾ļø 50ml maple syrup

ā—¾ļø 20g coconut oil

ā—¾ļø 40g (crunchy) peanutbutter

ā—¾ļø 1 biiiig tsp gingerbread spices

ā—¾ļø 1 pinch of salt

ā—¾ļø 30g vegan dark chocolate

ā—¾ļø 2 tsp coconut sugar (for on top)


šŸ‘©šŸ»ā€šŸ³Method:

  1. Preheat the oven to 160C. Then mix the oat flour, other flour (I used teff), syrup, gingerbread spices, salt, salt, peanutbutter, coconut oil together to make the dough. Taste and adjust to your liking (too dry: add plant milk, too wet: add flour, not sweet enough: more syrup etc).

  2. Roll out the dough into 0.5-1cm thick and then cut into any shape of choice using cookie shape cutters ;).

  3. Sprinkle a little coconut sugar on top and let them bake for 10 min until golden.

  4. Melt the dark chocolate in the mean time (I used the microwave šŸ˜† #teamlazy).

  5. Once the cookies are done, spread the chocolate on top! Let it cool and enjoy!
