CREAMY ZUCCHINI APPLE BROWNIE | GLUTENFREE & VEGAN & PALEO




Adding veggies to my breakfast is not something new. 😆The best thing is, YOU DON'T EVEN TASTE THEM! 🤩THIS BROWNIE IS SUPER RICH AND VERY DECADENT AND AT THE SAME TIME SUPER GOOEY AND AMAZING! Yeah, it needed capital letters lol 😝 . The addition of the apple make it also a more apple pie brownie, so no excuses NOT to make it!🙋🏻‍♀️


👩🏻‍🍳Ingredients:

◾️1/2 zucchini

◾️1/2 apple

◾️2/3 very ripe banana or sub for apple sauce + maple syrup

◾️2 dates

◾️2 tsp cacao powder

◾️35g almond flour or peanut flour

◾️vanilla flavourdrops or vanilla extract + maple syrup

◾️1 handfull of chocolate chips

◾️1 pinch of salt

◾️1 chia-egg


👩🏻‍🍳Method:

  1. Make the chia-egg (1 tbsp chiaseeds + 2 tbsp water) and shred the zucchini with a food processor.

  2. Then blend the banana, dates, vanilla flavourdrops/vanilla extract + maple syrup, chia-egg together until you get a sweet paste.

  3. Mix the almond/peanut flour, salt, cacao powder together and cut the apple into small pieces.

  4. Combine the zucchini, banana-date-chia-mixture, cacao flour mixture, chocolate chips and apple together and top it off with a few more chocolate chips & apple pieces. Feel free to also adds nuts or raisins as well ;).

  5. Grease an ovenproof dish with coconut oil and bake this goddess on 180 degrees for 30-40 minutes.

  6. Enjoy!
