CREAMY SWEET POTATOE CARROT SOUP (VG & GF & IBS FRIENDLY)










GUYS,


Finally ya girl got the guts to make some soup for herself (I usually am too lazy to do that 😆). And this soup, is SO Wonderfully creamy that every bite tastes like a bite of heaven. The texture is absolutely insanely smooth & creamy, that you wouldn't even think twice about having another bowl 🤤.


The carrot & sweet potatoe really make you get in a lot of healthy nutrients & veggies without really a lot of effort. Perfect for mealprep too!

This soup is also COMPLETELY GUT FRIENDLY as we have NO union, garlic, stock cubes or whatsoever in there. Perfect for those days when you're not feeling something too heavy. Optional to add some chicken or tofu for extra protein on top! I loveee to serve it alongside some bread/crackers with avocado/creamcheese as well!


THE CREAMIEST SWEET POTATOE CARROT SOUP (VG & GF & IBS FRIENDLY)

🥕🍠 Ingredients (2 portions):

◾️ 200g carrot

◾️ 200g sweet potatoe

◾️ 100ml of creamy full-fat coconut milk

◾️ 300ml of @alpro coconut milk (or use @rudehealth)

◾️ pinch of salt & black pepper

◾️ paprika powder

◾️ 2 slices of ginger


toppings: fresh cilantro & pomegranate seeds

Serve with: toast/crackers with avocado/cream cheese, tofu/chicken


👩🏻‍🍳Method:

Wash, peel and cut the carrot and sweet potatoe into smaller pieces. Sautee this in a large pot with a little coconut oil for about 3 min. Then add in all the remaining ingredients and let this simmer on medium heat for about 10-15 minutes. Add some more plant milk if it gets too 'dry'. Then blend with a blender (optional again to add some milk if it's too thick). Serve with everything you feel like! Stays good up to 3 days!
