โจCHERRY GINGERBREAD PIE WITH CASHEW-COCONUT FROSTINGโจ
๐ฐIngredients gingerbread pie
โพ๏ธ 180g oat flour
โพ๏ธ 100g almond flour
โพ๏ธ 1 ripe banana*
โพ๏ธ 4 tbsp maple syrup
โพ๏ธ 1 tsp baking powder
โพ๏ธ 1 tsp vanilla extract
โพ๏ธ 1 pinch of salt
โพ๏ธ 1 flax-egg
โพ๏ธ 1 biiigg tsp gingerbread spices
โพ๏ธ splash of plant milk
โพ๏ธ 60g almond butter
๐ฅฅIngredients cashew-coconut frosting
โพ๏ธ 100g cashews (soaked overnight or for at least 1h)
โพ๏ธ 200g thick coconut yoghurt @abbotkinneys
juice of 1 lemon
3 tbsp corn starch
4 big tbsp of maple syrup
๐Toppings: frozen cherries, gingerbread cookies, coconut shreds
๐ฉ๐ปโ๐ณMethod pie:
Blend everything together into a dough. Grease two silicon molds with a little coconut oil and pour the mixture in it. Let this bake for 25-30 minutes until golden in an oven and set it aside to cool.
๐ฉ๐ปโ๐ณMethod Frosting:
Soak the cashews in boiling water overnight (if you are lazy, boil them for at least 30 min).
Add the soaked cashews, coconut yoghurt, lemon juice, corn starch, maple syrup in a food processor and blend until a smooth cream. Set in the fridge for 15 minutes.
๐Decoration:
Top the first pie with the cashew-coconut frosting, then add the other pie and top with more frosting. Then add some frozen cherries, coconut shreds & some gingerbread cookies! Dig in! โจ
