BLACK SESAME CHEESECAKE | VG & GF & HP

Remember that I went to Eindhoven and visited @goodteastories? I absolutely fell in love with this store and their amazing drinks & foods š¤©! Their black sesame cheesecake was just INSANE āŗļø so I thought let's recreate it! It's not exactly the same but tastes absolutely AMAZING š¤©! Pairs perfectly with a @Nekohama Matcha šµ
Base:
ā¾ļø 3 medjool dates @koro_nl
ā¾ļø 1 very ripe banana
ā¾ļø 60g oats @meesters_van_de_halm
ā¾ļø 100ml oat milk @oatly
ā¾ļø 30g peanutbutter @depindakaaswinkel
ā¾ļø 1 pinch of salt
Cheesecake layer:
ā¾ļø 300g silken tofu
ā¾ļø 50g black sesame powder
ā¾ļø 10g roasted black sesame seeds
ā¾ļø 50ml maple syrup* (adjust to your own sweetness level)
ā¾ļø 1 tsp vanilla extract
ā¾ļø 1 tsp agar agar + 20ml water
ā¾ļø 30g tahini
toppings: fresh strawberries & black sesame seeds
š©š»āš³Method:
For the base, mix all the ingredients together in a blender and pour it in a baking dish. Let this base bake in a preheated oven on 170C for 20minutes approximately until golden!
In the mean time make the cheesecake layer by mixing the silken tofu, black sesame powder, roasted black sesame seeds, maple syrup and tahini together in a blender. Prepare the agar agar according to the package instructions and mix it in the black sesame mixture.
Once the base is cooled, pour over the black sesame layer and let it firm up in the fridge for at least 1 hour. Serve with fresh strawberries & black sesame seeds!
