BANANABREAD PIE WITH JUICY DATE PIECES & CHOCOLATE CHIPS (VG & GF & HP)


















Guys, I wanted to bake a Bananabread, but not like the one, EVERYBODY makes, 😏 I wouldn't be Jenny if I didn't make it ✨NEXT LEVEL✨! This one is so full of flavour, so juicy due to the juicy date pieces & banana pieces in there that makes this Bananabread just ABSOLUTELY INCREDIBLE!!


I used some carrot cake protein powder to spice up the protein, but feel free to sub for almond flour! 😏 Tastes amazing too!


BANANABREAD PIE WITH JUICY DATE PIECES & CHOCOLATE CHIPS (VG & GF & HP)

⏰40 min

🍌Ingredients:

◾️ 120g of buckwheat/quinoa flour* (sub for oat/spelt/any wholegrain flour)

◾️ 60g carrot cake protein powder @Myproteinnl**

◾️ 50g of oatmeal

◾️ 1 big pinch of salt

◾️ 1 big tsp of Ceylon cinnamon @koro_nl

◾️ 2 tsp of baking powder

◾️ 1 tbsp of coconut sugar @koro_nl

◾️ 80g of medjool dates @koro_nl

◾️ 250g of very ripe banana (approx 2,5 large or 3 normal)

◾️ 1 tsp of lemon juice

◾️ 60g of smooth peanutbutter (sub for any nut/seedbutter or coconut oil!)

◾️ 50ml of oat milk

◾️ 50g of dark chocolate


**sub for 60g of almond flour or any other protein powder of choice! Vanilla or chocolate works perfect too!


👩🏻‍🍳Method:

Mix all the dry ingredients together: flour, oats, protein powder, salt, coconut sugar, baking powder, cinnamon. Mash half of the banana, stone the dates and chop them. Mix the banana, dates, peanutbutter and lemon juice together. Add it to the dry with some oat milk (add more milk if it's too dry). Gently fold in the remaining banana, which you sliced into slices. Chop the dark chocolate and fold in too. Pour into a baking dish & top with more banana slices & more chocolate! 🍫 Bake for 30 min on 160C. Slices & ENJOY!
