APPLE PIE CINNAMON ROLL BAKED PORRIDGE | VEGAN & GLUTENFREE






WAIT WHAT? Jen, did I READ THAT CORRECTLY? Apple pie AND cinnamon roll AND BAKED PORRIDGE? All together?

Yes my friend, you just did.

So, no more words needed right?

YOU WANT THIS! It's like Apple pie married cinnamon roll and got a baby that's baked XD!

So here we go!


Ingredients:

  • 50g apple

  • 50g rolled oats

  • 1 tsp cinnamon

  • 1 tsp salt

  • 1 tsp pumpkin spice

  • 1 tsp nutmeg

  • 1/2 tsp vanilla extract

  • 1 tsp baking powder

  • 100ml cashew milk

  • 40g apple puree

  • 1 tbsp raisins

  • 20g chocolate chips

  • 1 tsp coconut oil

  • Coconut yoghurt

Method:

  1. Preheat the oven to 180 degrees C.

  2. Finely chop the apple and mix the apple with the oats, spices, baking powder and raisins together so it's all evenly coated.

  3. Add the cashew milk, apple puree, vanilla extract and coconut oil to a blender and blend on high speed (option to use a glass and fork for lazy people ;)

  4. Combine the wet and dry ingredients together and stir in half of the chocolate chips.

  5. Grease a baking dish with some more coconut oil and fill it with the dough.

  6. Add the remaining chocolate chips on top in a roll shape and bake in the oven for 30minutes! Serve with some coconut yoghurt ;)
