5 INGREDIENT PEANUTBUTTER JELLY STUFFED BANANA PANCAKES | VEGAN & GLUTENFREE





OMG OMG OMG, who doesn't love a good banana pancake for breakfast? And what's a better combination than peanutbutter jelly?? I don't know, but I promise you, this PEANUTBUTTER JELLY STUFFED BANANA PANCAKE STACK WILL MAKE YOU and everything inside you just melt!! It's sweet and absolutely gorgeous! Serve it with some vanilla coconut or almond yoghurt and you're really in a very very good place!


Ingredients:

  • 1 ripe banana

  • 1 flaxegg

  • 60g oatflour

  • cinnamon

  • coconut oil

  • 3 tbsp peanutbutter @depindakaaswinkel

  • chiaberry jam (recipe will be below)

  • 200g vanilla coconut yoghurt or almond yoghurt

  • toppings: flaxseeds, cacao nibs, walnuts, coconut shreds

Method:

  1. Mix the flaxegg, banana, oatflour, cinnamon, 1 tbsp peanutbutter together until you get a pancake batter.

  2. Heat up some coconut in a pan and bake the pancakes.

  3. Stuff the pancakes with the berry chiajam and drizzle the remaining 2 tbsp peanutbutter on top!

  4. Serve with some more berryjam, flaxseeds, cacao nibs, walnuts, coconut shreds and vanilla coconut/almond yoghurt which is just phenomenal! Optional to add some maple syrup as well! Bon appetit!
