Guys, it's almost Easter! 🎉Wooohoooo! Or not?? Well I woke up today and saw that I really had to use up some of the bottom almondbutter that was in my almondbutter bucket. So, tip from Jen, bake cookies using the remaining almond or peanutbutter in a jar or bucket as it might be unready to spread over your beloved sandwich or to drizzle over oatmeal. Cookies are your solution my friend. These 3 ingredient Easter almond butter cookies are literally DONE WITHIN 15 MIN and taste absolutely incredible! 🤤 Perfect to make on a Sunday as well, as a delicious snack with a movie in the evening or with a cup of coffee/tea/matcha in the mornings 🤤🍵☕️.
I know that most of us do not have a lot of time when it comes to baking or cooking that is why I try to make my recipe as easy and foolproof as possible. This time I only used 3 ingredients, which most of us have at home! (I do not count salt as an ingredient, so technically 4?). To make it super crunchy I used an egg, however if you do not eat eggs, you can always sub the egg for a vegan flax-egg! Then I do suggest adding a tablespoon of coconut oil, otherwise it won't turn out crispy 🤤. And I say, this is done within 15 minutes, so there is NO EXCUSE NOT TO TRY THIS RECIPE!
Almond butter?
The main ingredient in these cookies is of course almond butter. But why almond butter you may ask? Well let me tell you why almonds and almond butter is so extremely healthy 😏 (besides being extremely delicious 🤤🤤🤤). First of all, almonds deliver a lot of nutrients! Let me break down some of it for you:
A 1-ounce (28-gram) serving of almonds contains:
Fiber: 3.5 grams
Protein: 6 grams
Fat: 14 grams (9 of which are monounsaturated)
Vitamin E: 37% of the RDI
Manganese: 32% of the RDI
Magnesium: 20% of the RDI
They also contain a decent amount of copper, vitamin B2 (riboflavin) and phosphorus.
More reasons why you should give almonds a try:
Almonds are high in antioxidants that can protect your cells from oxidative damage, a major contributor to aging and disease.
They help digestion.
Moisturise your skin.
Protect you from heart disease
Add shine to dull hair.
Promote healthy cells
Lower cholesterol.
Promote better sleep.

Substitutes?
Well, since this recipe only has 3 ingredients, I cannot give you then more than 3 substitutes 🤣🤣 so, since I want to help any people who don't have one of the ingredients at home 😪 let me break some things down: 👇🏻
Almond butter: well this is kind of essential here 🤣, but in case you are allergic to almonds, or don't have almond butter at home, you can swab it for any nutbutter! I know for sure that peanut butter will be delicious too 😏.
Egg: as I already suggested, if you are vegan and do not eat eggs, swap for a flax-egg and 1 tbsp of coconut oil! Feel free to add some more almond flour or almond milk depending on the wet/dryness of the mixture!
Coconut sugar: I used coconut sugar for a more caramel taste, but feel free to swab it for any type of granulated sugar of your choice!

3 INGREDIENT EASTER ALMONDBUTTER COOKIES
INGREDIENTS:
(vegetarian/vegan & glutenfree & healthy)
⏰12 min
▪️1 cup of almondbutter @myproteinnl
▪️50-60g of coconut sugar (adjust to taste)
▪️1 egg*
▪️1 pinch of salt
optional: a few more almonds or chocolate chips as decoration!
*vegan? sub for 1 flax-egg + 1 tbsp of coconut oil!
Method:
1️⃣It's really the most easy cookies you can ever bake! Just mix all the ingredients together in the jar/bucket itself or take a bowl if you feel like it 🤣. Then form the cookies in any shape you like! Top with anything you desire.... Preheat the oven to 170C.
2️⃣Bake the delicious cookies for about 10 min in the oven. Let it cool for 5 min. ENJOY!!!
