Meat balls, who doesn't love them? This snack is perfect for our soccer players and are so easy to make! I used vegan pulled oats, which are made from oat protein! Plant-based meat substitutes are usually all made with soy or rehydrated wheat or whatever crazy ingredients I cannot pronounce, but these ingredients are pure and clean. Also they don't add a ton of E-numbers, artificial flavours, thickeners, starches, sugar, etc. etc. etc. (Not a big fan, can you tell ;)
The red colour is made using tomato puree, even my mom asked me like, how did you create this beautiful colour and I was like, tomatoe puree XD!
These wannabe meat-balls still have a meaty structure (honestly, even my brother who is a meat-lover told me so) and taste incredible! The ingredients are very simple and easy and all you need is a food processor or a strong arm haha ;).
They are perfect for meal-prep too! And of course a perfect snack to pair with the (sadly not vegan) ORANJE BRULSAUS from @verstegennl !

Ingredients:
70g oatflour
50g grated zucchini
1 package of pulled oats (175g)
1 flax-egg
salt & black pepper
onion & garlic powder (optional)
spices of choice
80g tomato puree (for colour)
topping: nutritional yeast
Method:
Wash and shred the zucchini.Add the zucchini in a kitchen towel and squeeze out the liquid. Preheat the oven to 180 degrees,
Add the zucchini, oat flour, pulled oats, flax-egg, salt & black pepper, spices of choice (paprika, cumin, coriander, cayenne, union, garlic powder choose urself), tomato puree together in a food processor and pulse it. If you don't feel like that, just use your strong hands to mix everything together.
Make little patties or balls of the mixture and place them on a lined baking tray with parchment paper to bake for 30 minutes. Optional to top them with some nutritional yeast.
Serve straight away!
You can keep these in the fridge for about 3 days or freeze them for 2 months!

1 pakje pulled oats (175g)
1 lijnzaad-ei
zout & zwarte peper
ui & knoflookpoeder (optioneel)
kruiden naar keuze
80 g tomatenpuree (voor kleur)
topping: Edelgist
Methode:
Was en rasp de courgette.Voeg de courgette toe in een keukenhanddoek en knijp het vocht eruit. Verwarm de oven voor op 180 graden,
Voeg de courgette, havermeel, pulled oats, lijnzaad-ei, zout & zwarte peper, kruiden naar keuze (paprika, komijn, koriander, cayennepeper, ui, knoflookpoeder naar keuze), tomatenpuree samen in een keukenmachine en pulseer het. Als je daar geen zin in hebt, gebruik dan gewoon je sterke handen om alles door elkaar te mengen.
Maak kleine pasteitjes of balletjes van het mengsel en leg ze op een met bakpapier beklede bakplaat met bakpapier om 30 minuten te bakken. Optioneel om ze af te werken met wat voedingsgist.
Serveer direct!
