Strawberries, one of my favourite fruits of all time! I just can't get enough of them! But did you know they also work very well in salads? This super simple 5 minute salad recipe is perfect for busy days! It's packed with plantbased protein and healthy fats to nourish your body. No excuses not to make it!
Ingredients:
2 big handfulls of arugula salad mix
1/3 cucumber
150g strawberries
150g frozen edamame
30g walnuts @koro_nl
15g olive oil
40g coconut yoghurt
1 tbsp balsamic vinegar
salt & black pepper
Method:
Wash the lettuce, cucumber, strawberries. Thaw the frozen edamame and cook it for 5 minutes in boiling water. In the mean time, cut the cucumber into small pieces as well as 100g of the strawberries.
To make the strawberry dressing, we mix 50g strawberries, olive oil, coconut yoghurt & balsamic vinegar in a mixer. Add salt & black pepper to taste.
MIx the dressing in the lettuce, add cucumber, edamame, strawberries & walnuts and bon appetit!
Tip: to make it more filling, add some quinoa/millet/avocado/sweet potatoe, anything works!
