SALTED CARAMEL PANCAKES | VEGAN & GLUTENFREE





PANCAKE SUNDAY!! It's that time again ;), so coming at u with a special version: SALTED CARAMEL (I know overrated, but this one taste soooo goood!). They didn't turn out perfectly, but the taste is amazing :), but I really wanted to share this recipe with you guys so here we go!


Ingredients:

  • 2/3 very ripe banana (60g approx)

  • 30g almond flour + 30g oat flour (or sub for 60g oat)

  • 20g vegan salted caramel protein @myproteinnl

  • 1 date

  • cinnamon

  • 1 tsp baking powder

  • coconut oil

  • splash of almond milk

  • 1 pinch of salt

  • 1 (flax)egg

  • toppings: berry jam, peanutbutter & maple syrup

Method:

  1. Add everything to a blender except the oil, we need that for baking and mix until you get a pancake batter. ( Add more almond milk if the structure is not pancake battery enough, but make sure it is not runny, cause we want thick).

  2. Heat up coconut oil in a pan and make little pancakes from it.

  3. When you stack the pancakes, spread some berry jam and peanutbutter in between as well, trust me, it's a GAME-CHANGER, and top it off with more peanutbutter & maple for pancake essentials!
