๐PUMPKIN CREME AVOCADO TOAST (LUNCH TO-GO) 5 min ๐
๐ฑIngredients:
โพ๏ธ 2 slices of spelt sourdough
โพ๏ธ 100g pumpkin puree*
โพ๏ธ 60g vegan cream cheese @oatly
โพ๏ธ 1 tbsp maple syrup
โพ๏ธ pumpkin spice
โพ๏ธ 1/2 avocado
โพ๏ธ salt & black pepper
*sub for sweet potato if you do not have pumpkin
optional: add some wasabi for extra kick

1๏ธโฃ Make the pumpkin creme by mixing the pumpkin puree, vegan cream cheese, maple syrup, pumpkin spice together in a bowl.
2๏ธโฃ Toast up two slices of your favourite sourdough toast, add the pumpkin creme on top (a very thick layer), then the avocado! Ready to go!
