HAPPY INTERNATIONAL PANCAKE š„ DAY!!! As you know I absolutely loveeee pancakes! So why not make some of my old favourite: poffertjes? They are actually just a Dutch mini-pancake version: poffertjes. However, this time I was inspired by who else than the queen @pamela_rf and recreated a PAM APP recipe! However, I wouldn't be Jenny if I didn't make some kind of high protein version of it right? š¤Ŗš„³. Sooooo for some extra šŖš» I added some vegan carrot cake protein powder (which is one of my favourite flavours!) to boost the protein content! In addition I used my favourite matcha cashew butter as I of course cannot live without it! So what stops you from making these?

Hey, I got you! If you don't have all the ingredients at home, here are some suggestions for substitutes!
Oat flour: you don't like the taste of oats? Then I suggest substituting it for any whole grain flour, think of spelt, buckwheat, normal wheat... all works š.
Banana: oeeehhh this one is a bit tricky. But if you really don't like my yellow friend š, you can sub it for apple slices! I think that would work amazing too!
Vegan Carrot Cake Protein Powder: as I already wrote in the recipe itself, I suggest switching this protein powder either for another protein powder flavour (Personally I loveeeee this flavour), but chocolate or salted caramel would work amazing tooš¤¤. Otherwise, sub it for almond flour! Adds more protein! If you also don't have that... use more regular flour!

MINI BANANA PANCAKE SANDWHICH (HEALTHY POFFERTJES NEXT LEVEL) š„
vegan & glutenfree & high protein
INGREDIENTS (1 portion):
ā°15 min
āŖļø1 large ripe banana
āŖļø30g oat flour
āŖļø20g of vegan carrot cake protein powder @myproteinnl *
āŖļø1/3 tsp of baking powder
āŖļøpinch of salt
āŖļø150ml of almond milk
āŖļøpumpkin pie spice
āŖļø1 tsp of nutbutter
āŖļøchocolate chips
āŖļø1 tbsp of coconut oil for frying
*sub for oat flour or any other protein powder of choice!
Toppings: 1 tbsp of matcha cashew butter, cacao nibs, coconut flakes & later on I added some coconut yoghurt!
Method:
1ļøā£First we make the batter, mix the oat flour, protein powder, salt, baking powder, almond milk and pumpkin pie spice together in a bowl. Next slice your banana into coins.
2ļøā£Then on half of the amount of banana slices add some chocolate chips and/or nutbutter. Then add the other half of the banana slices on top. Dip these banana sandwiches into the batter.
3ļøā£Heat up some coconut oil in a pan and add the little pancake sandwiches in there. Fry on both sides until golden.
4ļøā£Serve them with anything you like! I served it with some more matcha cashew butter, cacao nibs, coconut flakes & some more coconut yoghurt!
