HIGH PROTEIN CARROT CAKE |VEGA(N) & GLUTENFREE










OMG YA GIRL LOVES CARROT CAKE! šŸ„•šŸ° And ever since I have gotten the vegan carrot cake protein blend of @myproteinnl I had to make a carrot cake out of it right? Well this carrot cake is so delicious & honestly almost single serve haha (or well, I just call it single serve lol). šŸ˜ It does depend on whether you make it vegan or not how high the protein content it, but regardless, it's packed with plant power!šŸ’ŖšŸ»


Ingredients cake:

ā—¾ļø 90g vegan carrot cake protein powder @myproteinnl

ā—¾ļø1 very large ripe šŸŒ banana*

ā—¾ļø2 (flax)eggs**šŸ„š

ā—¾ļø 2 grated šŸ„•

ā—¾ļø90g oat flour

ā—¾ļø a ton of pumpkin spice @koro_nl

ā—¾ļø1 pinch of salt

ā—¾ļø40g raisins

ā—¾ļø50g crushed walnuts


Frosting:

ā—¾ļø 400g lactosefree/vegan quark

ā—¾ļø vanilla flavour drops @myproteinnl or vanilla extract + 3 tbsp maple syrup


Method:

  1. Preheat the oven to 180C. Grate the carrots. Mash the banana. Then add the banana, (flax)eggs, oat flour, carrot cake protein powder, pumpkin spice, salt together in a blender and blend until the mixture is creamy. If you use flax eggs make sure to add some vegan yoghurt for more wetness! Then add in the carrots, raisins & crushed walnuts.

  2. Line two small baking round tins with baking paper and brush the sides with coconut oil so the cake doesn't stick. Then add in the batter in both baking dishes and let it bake in the oven on 180C for 25-30 minutes.

  3. Make the frosting by combining it all together. Wait until the cake is entirely cooled down and add the frosting on top of the cakes and stack them together. Top with a little more carrot, walnuts & raisins and dig in!

  4. Honestly, this cake is so insanely delicious! šŸ¤¤ You can make it sweeter by adding more syrup or sugar if you feel like it!
