Craving something savoury? š Well, I do eat my greens despite my love for bananas and chocolate š¤£. I wanted to create a pesto recipe that will blow your mind and is extremely delicious without added preservatives and other weird things that store-bought pestos have. It's super easy and stores in the fridge for up to 7 days!
š©š»āš³Ingredients:
ā¾ļø Ā½ cup (72 g) raw almonds @koro_nl
ā¾ļø 1/4 cup (60g) fresh spinach
ā¾ļø 1 cup (150 g) sun-dried tomato in oil, drained
ā¾ļø Ā½ cup (120 mL) oil from jar of sun-dried tomatoes
ā¾ļø 2/3 cup (20g) fresh basil, packed
ā¾ļø 2 cloves garlic
ā¾ļø 2 Tbsp (20 g) nutritional yeast
ā¾ļø Ā½ lemon, juiced
ā¾ļø salt & black pepper to taste
š©š»āš³Method:
Heat a small pan over medium-high heat, and toast the almonds for 3 - 5 minutes.
To a food processor, add the toasted almonds and all the remaining ingredients.
Blend on high speed until smooth, with little chunks remaining if desired. Enjoy!
Serve with crackers, bread or pasta or just eat it straight from the jar!
