Green Savoury Tofu Mousse & Pumpkin Cream | Vegan & Glutenfree






Looking for some babyfood? Joking, but who doesn't like creamy stuff? I definitely do! This cold Green & Orange layered parfait is perfect for lunch, snack or dinner! You can serve it along some avocado toast or anything else that you fancy, crackers word really well too! The pumpkin cream is sweet, rich and tasty, while the green savory tofu mousse is creamy and nutritous and adds healthy plantbased proteins! Serve it at a party and I'm sure people will love it! Looks too good to be true right? All you need is one blender! and you're ready to go!


Green savoury tofu mousse

Ingredients:

  • 300g firm tofu

  • 2 tbsp soy sauce

  • 1 handfull of spinach

  • 1 tbsp superfoodgreen powder

  • 1/2 ripe avocado

  • salt & black pepper

  • 1 tbsp maple syrup

  • 1 slice of ginger

Pumpkin Cream

Ingredients (2 big portions):

  • 1 can pumpkin puree (400g) @koro_nl

  • 1 very ripe banana

  • 100g almond/coconut quark

  • 1 pinch of salt

  • pumpkin spice

  • 1 tsp vanilla extract

  • 2 tbsp maple syrup (add more for more sweetness)

Method:

Blend it together and enjoy!
