EASY BANANABREAD CARROTCAKE BAKED OATS | GLUTENFREE & VEGAN




WHO DOESN'T LOVEEE BAKED OATS? This one is a combination of one of my favorite cakes: bananabread + carrot cake! Cause why choose when you can have both hahaha. Super easy and extremely delicious! All you need are a couple of ingredients and the core is AMAZING I PROMISE! It's so so so good! Well actually it's more a cheesecake as well haha with this coconut vanilla core! Here is the recipe!


Ingredients:

  • 120g vanilla coconut yoghurt*

  • 35g oat flakes

  • 1 tbsp chiaseeds

  • cinnamon

  • 1 tbsp maple syrup

  • 1 ripe banana

  • 40g grated carrot

  • optional: pecans, walnuts & raisins

  • 1 tsp baking powder

Method:

  1. Mash the banana with a fork and mix together with the maple syrup, cinnamon, baking powder, grated carrot, 80g vanilla coconut yoghurt, chiaseeds and oatflakes in a bowl.

  2. Then add the grated carrot and optional raisins, pecans & walnuts (highly recommended though). Make a hole in the center and add the remaining vanilla coconut yoghurt in there. Top it with a few more banana slices & nuts.

  3. Let this baby bake in the oven on 180 degrees for 15 minutes and enjoy!

*sub for soy or almond or any other yoghurt also works! For the vanilla flavour you can also add some vanilla extract + maple syrup!
