This month I finally got to try the amazing products from @naturally_pam and I started with Pamela's famous nut clusters. OMG I was immediately thrown away, with so little ingredients, you can create such delicious snacks! I love to have them as a dessert, topping on yoghurt or smoothie bowls, or just in general. So I thought to myself, why not make a version myself? Therefore, I tried some combinations and guys, I tell you it's not exactly the same as I added more quinoa puffs and used different nuts (I didn't have hazelnuts and not enough almonds at home anymore...) but the taste and texture is absolutely incredible! The crunchy-ness of the quinoa puffs and nuts in combination with the cacao is just mind-blowing 🤤.
Benefits of nuts
Well, as you probably have guessed, I absolutely loveeeee nuts. They are such powerhouses containing so much important nutrients for your body. In this case I used a mix of pecans, walnuts and macadamia nuts. Pecans are an amazing source of calcium, magnesium, and potassium, which help lower blood pressure and have many other functions in the body. Walnuts are a great source of OMEGA-3 fatty acids which so many people lack in their diet. It is anti-inflammatory and keeps both the heart and the brain healthy. Lastly, I used macadamia nuts. These nuts are usually a bit on the expensive side, but definitely with every penny that you pay for them! Macadamia nuts are packed with healthy fats and one serving of macadamia nuts also contains dietary fiber, protein, manganese, thiamin, and a good amount of copper. Therefore, what stops you from giving these nuts a try??
Cacao nibs benefits
For a healthy source of my favourite chocolate, I used a combination of cacao and cacao nibs. They are the purest source of cacao that has the most antioxidants possible. Here are some more reason why you should consume some cacao:
Lower Blood Pressure. Cacao powder is packed with flavonoids.
Reduced Diabetes Risk. The flavonoids in cacao powder may help increase insulin sensitivity, reducing your risk of diabetes.
Reduced Heart Disease Risk. Cacao powder contains lots of potassium.
Reduced Inflammation.
So, these nut clusters are not only addictive, they are also loaded with healthy anti-oxidants and nutrients for your body! Give them a try I say!
CRUNCHY CHOCOLATE NUT CLUSTERS
vegan & glutenfree & low-fodmap / gut friendly
INGREDIENTS:
⏰20 min
▪️90g nuts
▪️40g maple syrup
▪️1 pinch of salt
▪️ 2 tsp of raw cacao powder
▪️30g of cacao nibs
▪️80g of puffed quinoa
Method:
1️⃣First chop up half of the nuts finely into tiny nut pieces. I promise it will add a lot more to the texture! Then mix all the ingredients together in a bowl. For the nuts I used a mix of macadamia, walnuts & pecans, but feel free to use any type of nut!
2️⃣Line a baking tray with parchment paper and let this all bake for 15min on 160C in a preheated oven.
3️⃣Let it cool.
4️⃣Break it down into chunks and ENJOY!
