CREAMY CARROT CAKE OVERNIGHT OATS | VEGAN & GLUTENFREE




CARROT CAKE, It's truly one of my all time favourite cakes in the world! I could eat it for breakfast, lunch, dinner etc. etc. Last night I was super hungry for some reason (let's say it's swimming) so I decided to make myself this delicious bowl of heaven. I can say, it didn't dissapoint haha. Why can't you have oats at 8:30 PM? I think you can (I'm the porridge princess so yeah, let's go my dudes!). Super easy, no advanced skills required and I promise, this tastes like HEAVEN!


Ingredients:

  • 50g rolled oats

  • 1 tbsp chiaseeds

  • 1/2 ripe banana

  • 250ml CASHEW MILK (life changing trust me) or use oat milk if u don't do cashew

  • 1 grated carrot

  • 15g raisins

  • gingerbread spices

  • 30g walnuts

  • 100g (vanilla) coconut yoghurt

  • 1 pinch of salt

optional:

- 1 tbsp maple syrup (for the ones with a sweet tooth)

- 1 tbsp vegan vanilla protein powder

toppings: walnuts, blueberries, orange, gojiberries, flaxseeds


Method:

  1. Mash the banana with a fork and add all the dry ingredients into a glass jar. Then add the cashew milk and let it sit for at least 2 hours.

  2. Either eat it straight like this or heat it up on the stove (I prefer it hot, but you choose!) Optional to add some maple syrup and/or vegan vanilla protein powder as well!

  3. Add the oats to a bowl and make a centre in the middle where you add in the (vanilla) coconut yoghurt. If you don't have vanilla, add some vanilla extract + maple syrup, to make it realllyyy taste amazing!

  4. Add your desired toppings, I used walnuts, blueberries, orange, gojiberries, flaxseeds! Enjoy!

That was easy right? And I promise you, it tastes amaaazing!
