COLOURFULL ROASTED QUINOA SALAD WITH EDAMAME & ROTI VEGAN PIECES





Autumn is here and besides pumpkin, I absolutely love roasted carrot šŸ„• as well! @euroma_nl just recently launched some new spice blends and aaahhh I love them šŸ¤© they make every meal just a little more delicious and nutritious too! I used the vegan pieces from @peasmakers.nl (super easy and delicious!) šŸ˜‹ to pair with them! Obviously I didn't only make that, as I served it with a colourful roasted veggie salad šŸ„— (my go-to dinner šŸ½)


COLOURFULL ROASTED QUINOA SALAD WITH EDAMAME & ROTI VEGAN PIECES

4 portions šŸ‘Øā€šŸ‘©ā€šŸ‘§ā€šŸ‘¦

šŸ„•GARLIC ROSEMARY ROASTED CARROTS

ā—¾ļø 1kg carrots

ā—¾ļø 3 tbsp garlic olive oil

ā—¾ļø salt & blackpepper

ā—¾ļø Dried rosemary


šŸŒ¶ROASTED BELL PEPPERS

ā—¾ļø 500g sweet red bell peppers

ā—¾ļø 2 tbsp olive oil

ā—¾ļø salt & black pepper


šŸ«“ROTI VEGAN PIECES

ā—¾ļø 100g (dry) vegan pieces @peasmakers_nl

ā—¾ļø 1 tbsp Roti Spices @euroma_nl

ā—¾ļø 1 tbsp avocado oil

ā—¾ļø salt & black pepper


šŸŒ±SALAD INGREDIENTS

ā—¾ļø 240g (dry) quinoa

ā—¾ļø baby spinach

ā—¾ļø 2 avocado

ā—¾ļø balsamic glaze

ā—¾ļø olive oil

ā—¾ļø 300g frozen edamame


šŸ‘©šŸ»ā€šŸ³Method:

  1. Cook the quinoa according to the package instructions. Cook the edamame in hot water as well for 5 minutes.

  2. Cut, wash the veggies, for the carrots add them on a baking tray and drizzle the garlic oil, salt& black pepper and rosemary on top. Do the same for the red bell peppers (without the rosemary).

  3. Soak the vegan pieces for 5 minutes. Then bake them in a pan with avocado oil, spices, salt & black pepper.

  4. Assemble the salad, massage olive oil in the baby spinach, add quinoa, edamame, roasted carrot & bell pepper, the Roti pieces, 1/2 avocado per person, balsamic glaze & the roti pieces! Enjoy!
