OMG, I think I just made the best every fluffiest blueberry bananabread pancake stake EVER! The most easy thing is, you don't even need a pan for these pancakes! Just an oven and some patience and you're good to go! The vanilla yoghurt adds a perfect extra taste and texture that just makes this perfect! No sugar needed, but a drizzle of maple afterwards is always a good idea ;)! Here is the recipe!
Ingredients:
50g oat flour or teff flour or almond flour
1 tbsp chiaseeds
1 (flax)egg
1 very ripe banana (approx 120g)
50g (frozen) blueberries
1 tsp vanillla extract
1 pinch of salt
cinnamon
1 tsp baking powder
250g coconut/Greek yoghurt
vanilla extract + maple syrup or vanilla flavourdrops
toppings: roasted pecans, cacao nibs, fresh blueberries, cinnamon
Method:
Preheat the oven to 180 degrees C and grease two round baking dishes with some coconut oil.
Mix the (flax)egg, banana, vanilla, salt, cinnamon, baking powder together.
Then add the flour, blueberries and chiaseeds in it. Stir until you get a pancake batter. Pour the batter into the oven dishes and let them bake for about 30 minutes.
In the mean time, make the vanilla yoghurt by adding the vanilla extract + maple syrup or vanilla flavour drops to your yoghurt.
When the pancakes are done, add the yoghurt as layers on top and stack them! Top with roasted pecans, more bluebs, cacao nibs and cinnamon! Enjoy!

Ingredienten:
50g havermeel @meestersvandehalm
1 el chiazaad
1 (lijnzaad)ei
1 hele rijpe banaan (ong 120g)
50g (bevroren) blauwe bessen
1 tl vanille extract
1 snufje zout
kaneel
1 tl bakpoeder
250g kokos/Griekse yoghurt
vanilla extract + maple syrup of gebruik vanille flavourdrops
toppings: geroosterde pecannoten, cacao nibs, verse blauwe bessen, kaneel
Methode:
Verhit de oven op 180 graden C en vet twee ronde bakvormpjes in met wat kokosolie.
Meng het (lijnzaad)ei, banaan, vanille extract, zout, kaneel, bakpoeder samen.
Voeg dan het meel toe, de blauwe bessen en chiazaad en roer het totdat je een pannenkoek deeg krijgt. Doe het vervolgens in de ovenschaaltjes en laat het bakken voor 30 minuten.
Ondertussen, maak de vanille yoghurt door de vanille extract + maple syrup of vanille flavourdrops bij je kokos/Griekse yoghurt te doen!
Als je 'pancakes' klaar zijn, voeg je de vanille yoghurt als layers on top en maak je een 'pancake' stack. Top met roasted pecans, nog wat blauwe bessen, cacao nibs en enjoy!
