5 INGREDIENT FLUFFY ZUCCHINI CHICKPEA PANCAKES | VEGA(N) & GLUTENFREE







Pancakessss !!! Who doesn't love pancakes?? I definitely am a hugeee pancake lover, but did you know that savory pancakes are a thing as well?? These pancakes are perfect for a Sunday's brunch or for mealprep! You can make them vegan by subbing the eggs for chickpea flour instead, but then they won't be as fluffy as using real eggs!


So here is the recipe ;)


Ingredients (1 portion):

  • 1 small can of chickpeas (80g)

  • 2 eggs or use 70g chickpea flour + 150ml plantmilk

  • salt & black pepper

  • avocado oil

  • 50g zucchini

  • spices: I used nutmeg ;)

Method:

  1. Add the chickpeas, zucchini, eggs or chickpea flour + plantmilk in a blender with salt, black pepper, and spices of choice.

  2. Heat up some avocado oil in a pan and fry the batter in it like you normally do with pancakes!

  3. Enjoy with tahini & avocado ;)
