2 INGREDIENT BLUE CORN TORTILLA WRAPS | VEGA(N) & GLUTENFREE




Who doesn't love some good filled wraps? I certainly do! These wraps are made with BLUE CORN FLOUR, which causes the weird colour haha and makes them glutenfree! I stuffed one with vegan red pesto, vegan chicken pieces, roasted veggies, corn and more and the other one with cream cheese, egg and sauteed spinach. Feel free to leave out the egg and sub for tofu for an entire vegan version! I also served it with roasted veggies

Health & Nutrition Benefits of Blue Corn

Blue corn contains high levels of anthocyanins, which is what give it the blue tones. This is the same antioxidant found in other blue/purple/red plants including berries.

  • better metabolism of glucose;

  • properties that protect from cell damage and toxins;

  • inflammation reduction; and

  • better cognitive function.

And blue corn tortilla recipes contain 20% more protein than those made form white or yellow corn. They also have less starch and a lower glycemic index (GI).

And if we still haven’t convinced you, how about the fact they look and taste great!


Ingredients (4 tortilla/wraps):

  • 2 cups blue corn flour*

  • 2 cups warm water

Method:

  1. Mix the blue corn flour and warm water for about 4 minutes (listen to a song ;)

  2. Divide the dough into 16 small-sized portions, about golf ball size (or tennis ball for big wraps haha).

  3. Press into 6 inch (15 cm) round shapes using a tortilla press lined with wax paper, or use your hands to flatten out the dough into wrap shapes lol.

  4. Place the wraps in a skillet or flat pan, pre-heated to a high temperature. Let cook for about 20 seconds and flip. Cook for a further 20 to 30 seconds.

  5. To keep your tortillas from drying, place the completed tortillas in an oven on low heat!

Ingredients vegan chicken pesto wrap:

  • 1 wrap

  • 2 tbsp vegan red pesto

  • vegan chicken

  • corn

  • roasted red bell pepper

  • roasted carrot

  • vegan soy floss

Ingredients cream cheese spinach egg wrap:

  • 1 wrap

  • 2 tbsp (vegan) cream cheese

  • 1 egg

  • sauteed spinach

  • salt & black pepper

Sides:

  • garlic roasted pumpkin, radish & carrot
