STRAWBERRY COOKIE DOUGH PARFAIT | VEGAN & GLUTENFREE












Breakfast lover here? Well, this parfait is PERFECT for a guilt-free fancy breakfast or delicious dessert! All you need are a couple of ingredients and you're ready to go! Currently I'm in love with fresh strawberries, so let's make the best when they are still in season!

The dates of @koro_nl are really the JUICIEST, BIGGEST & MOST DELICIOUS dates I have ever tasted, no food processor needed as they are soft enough to use your hands to make a delicious dough!

Btw who doesn't love cookie dough for breakfast or dessert hahaha, I def do ;)

Super easy and extremely delicious!

Ingredients (2 portions):

  • 400g coconut yoghurt

  • 300g strawberries

  • 30g dark chocolate

Cookie dough balls:

  • 30g cacao nibs

  • 30g peanutbutter

  • 50g oats

  • 4 medjool dates @koro_nl

  • 1 tbsp raw cacao powder

  • 1 tsp salt

Method:

  1. Mix all the cookie dough balls ingredients together in a bowl and kneed it until a dough. If your dates are too hard, use a food processor instead. Make little balls of them.

  2. Take 2 glass jars and add 2/3 of the coconut yoghurt in it, then add fresh strawberries and dark chocolate and a couple of the cookie dough balls. Top with the remaining yoghurt, few more berries & cookie dough balls!

  3. Enjoy!
